Watermelon salsa is a perfect appetizer for summer. Very easy and quick to make. Just combine everything. Refrigerate for few minutes and enjoy. If you have mango, strawberry or any other fruit then you can add them in this salsa. Use the fruits according to your choice. Bowl full of this salsa is refreshing, filling, healthy and delicious. I have used boiled sweet corn, cucumber and tomato in this salsa. You can use red and yellow bell pepper, mango, pineapple, strawberry or any fruit of your choice.

Recipe

Watermelon – 2 cup, scooped or cubed

Sweet corn – 1/2 cup, boiled

Cilantro or coriander leaves – 2 tablespoon, chopped

Green chilli – 1 finely chopped

Cucumber – 1, peeled and cubed

Tomato – 1 cubed

Red onion – 1, chopped

Freshly crushed black pepper – to taste

Dried mint leaves – 2 tablespoon, crushed

Or

Fresh mint leaves – 2 tablespoon, chopped

Orange juice – 1/4 cup

Lemon juice – 1 tablespoon

Rock salt or black pepper – to taste

Method

1. Combine everything in a glass bowl. Mix gently.

2. I have used dried mint leaves. If you are using dried mint leaves like me then crush the dried leaves with your both palm and mix.

3. Garnish with cilantro or coriander leaves or mint leaves.

4. Refrigerate for 30 minutes and serve with tortilla chips or papad. Or enjoy bowl full as appetizer.

Notes

1. You can use jalapeño, red and yellow bell pepper, mango, strawberry, pineapple, fresh coconut pieces or any fruit of your choice.
2. Add chilli and black pepper according to your taste.

Cucumber Curry / Fasting Recipe

Cucumber curry.
An easy and delicious recipe for fasting days. You can serve it with sabudana khichdi or any fasting foods. Or enjoy it bowl full without anything as I did. Coconut, almond, green chilli and kokum made it super yummy.
Got this recipe from Mahesh Khole. Remember Mahesh who shared his Bombay duck fry on this blog as a guest post.
He gave me the recipe one year ago. Made it many times. Today sharing it with my readers.

Low calorie cucumber is best for fasting days.
Though commonly thought to be a vegetable, cucumber is actually a fruit.
It’s high in beneficial nutrients, as well as certain plant compounds and antioxidants that may help treat and even prevent some conditions.
Also, cucumbers are low in calories and contain a good amount of water and soluble fiber, making them ideal for promoting hydration and aiding in weight loss.
Cucumbers are a refreshing, nutritious and incredibly versatile addition to any diet.
They are low in calories but contain many important vitamins and minerals, as well as a high water content.

Our this week’s 191 #Foodiemonday bloghop theme is #dahidelight suggested by Priya Iyer who blog at The world through my eyes. Check out her blog for traditional and authentic recipes.

Recipe is very simple. I have added almond and melon seeds for thickness of the gravy and little ginger for taste. Mahesh suggested to add butter milk. But I have used curd, you can use buttermilk or can skip both. If you don’t have kokum then no problem you can also make it without kokum. First time I made it without kokum. If you are making it without kokum don’t skip curd. For fasting foods we use ghee or clarified butter but you can also use oil if you want.

Recipe

Cucumber – 2

Coconut – 1/4 cup, grated or finely chopped

Melon seeds – 2 tablespoon

Almond – 8-10

Dry red chilli – 1

Cumin seeds – 1 teaspoon

Peanut – 2 – 3 tablespoon, dry roasted and crushed

Curd – 1/3 cup

Green chilli – 1 – 2

Grated ginger – 1/2 teaspoon, optional

Kokum – 1 – 2 pieces

Slit green chilli – 2

Ghee or clarified butter – 1 tablespoon

Rock salt and sugar to taste

Method

1. Rinse and peel the cucumber. Cut in cubes.
Taste before cutting. It should not be bitter.

2. Soak the almonds in hot water. Peel when cool.

3. Grind coconut, ginger, green chilli, peeled almond and melon seeds all together. Make a smooth paste.

4. Heat ghee or clarified butter in a pan.

5. Add cumin seeds and dry red chilli.
When the seeds crackle add cubed cucumber and rock salt.

6. Saute till moisture of cucumber evaporate and dried up.

7. Add the ground paste. Saute for 1-2 minutes.

8. Add well beaten curd, water, 2 slit green chilli, kokum and sugar.

9. When it starts to rolling boil reduce the heat. Cover and cook on simmer for 10 minutes. Stir in between.

10. Remove the cover. There should be thick gravy. If it runny cook on high heat for a few minutes more.

11. Add roasted and crushed peanuts and mix.

12. Taste and adjust the seasoning and remove from heat.
Your cucumber curry is ready.

13. Garnish with almond and chilli. You can garnish with coriander leaves if you like.

14. Serve hot bowl full or serve with sabudana khichdi.

Notes
1. Add chilli according to your taste.
2. If you want you can skip curd.

3. Cashew nuts can be used instead of almond.

Vegan fruity golden smoothie with fresh turmeric and Aloe Vera.
Dairy free golden smoothie with fresh turmeric, ginger, Aloe Vera gel, grapes, orange, carrot, cucumber, coconut milk and flavoured with mint and cinnamon. A perfect breakfast smoothie for weight watchers.

You don’t need to make juice of orange and carrot. Just use finely chopped or grated carrot and remove the skin and seeds of orange before using. Smoothie is enough sweet due to orange and carrot so you don’t need any sweetener.

Turmeric is known for it’s healing compounds curcumin. Ginger is high in gingerol, a substance with powerful anti-inflammatory and antioxidant properties.

Now coming to the easy and simple recipe. Just combine everything and blend till the mixture becomes smooth. I don’t like the flavour of fresh turmeric so I have added cinnamon. Because of mint leaves and cinnamon you hardly notice turmeric flavour. If you want you can omit mint or cinnamon. But I recommend to use both for a lovely flavour.

Recipe

Grapes – 1 cup

Orange – 1 large or 2 small

Carrot – 1, grated or finely chopped

Cucumber – 1, optional

Ginger – 1/2 inch piece, optional

Fresh turmeric – 1/2 inch piece

Mint leaves – few

Lemon juice – 1 – 2 tablespoon or as require

Aloe Vera gel – 1 – 2 tablespoon

Coconut milk – 1/2 cup

Cinnamon powder – 1/2 teaspoon, optional

Method

1. Peel and remove the seeds of orange. I have small oranges so used two oranges. If you have large orange then use one.

2. Peel and chop the cucumber. Taste before using. Cucumber should not be bitter.

3. Peel and grate or finely chop the ginger and fresh turmeric.

4. Combine everything, add 1 tablespoon lemon juice and blend till smooth and frothy. Taste and add more lemon juice if require.

5. Pour in your favourite glass. You can add some ice cubes in the glass if you want.

6. Garnish with mint leaves, cucumber and lemon wedges. Serve chilled or in room temperature.

Notes
1. If you want sweeter smoothie omit the cucumber
2. If you don’t like cinnamon then you can skip it.
3. Add lemon juice according to your taste.

I have used cucumber, carrot, orange juice, beetroot, almond, walnut and lemon in this smoothie. And every ingredients helps you to make your skin glow.

Cucumber – Cucumbers are light on the stomach, and perfect for quenching thirst and staying hydrated.
In fact, cucumber’s high water content is excellent for the skin as it keeps it hydrated and well-nourished. It is also rich in silica, which enhances your natural complexion and adds a glow to it.
Cucumber contains potassium, magnesium, biotin, and vitamins A, B1, and C, and therefore helps to improve your skin condition.

Carrot – We have been told time and again that carrots are great for the eyes. What you do not know is that they are great for the skin too.
Carrots contain vitamin A, which fights acne, wrinkles, pigmentation, and uneven skin tone. The juice is rich in fiber, which eases bowel movement and excretion, thereby clearing out your stomach. This enhances your skin.
Carrots also contain vitamin C and potassium, which improve skin elasticity and help in the regeneration of new cells.

Orange – Along with boosting your mood, it also elevates your skin’s health.
Oranges are rich sources of citric acid that aid collagen and elastin formation in the skin. Hence, they dry acne, enhance your complexion, improve your skin texture, and make your skin firm. Oranges also hydrate the skin and treat sunburns.
They contain antioxidants that fight free radicals and prevent wrinkle formation and skin sagging, thereby controlling premature skin aging.

Beetroot – Fresh beetroot juice has anti-inflammatory properties and is a rich source of iron and potassium, which help purify the blood. The vegetable juice also contains vitamins A, C, K, copper, magnesium, folic acid, and zinc.
Dilute beetroot with another ingredient and drink the juice every day to fight skin problems such as blemishes, acne marks, and inflammations.

Almond – The regular consumption and the proper external application of soaked almonds can do wonders for your skin.
Vitamin E and other antioxidants present in these nuts can eliminate the harmful free radicals from your body. As a result, the aging process gets delayed and you remain younger-looking for a longer period.

Walnut – Walnuts are good for the skin as they are packed with B-vitamins. Vitamin B is an excellent stress and mood manager. Lower stress levels result in a better skin. Increased stress levels can result in the earlier onset of wrinkles, thus inducing faster aging. Lemon – Lemon is full of natural antioxidants. It can effectively combat damaging free radicals and remove them completely from your body. Being a good source of vitamin C, the fruit also repairs the damaged skin cells as well as helps you get rid of fine lines, blemishes, wrinkles, deep furrows etc. Hence, lemon water is considered as a great anti-aging solution.

You can add 1 – 2 tablespoon Aloe Vera gel and 1 inch piece fresh turmeric root in the smoothie to make it more effective for glowing skin. Add fresh turmeric if you like the flavour. I don’t like the flavour of fresh turmeric so I didn’t use it.

Recipe

Boiled or baked beetroot – 1

Cucumber – 1

Mint leaves – 3 tablespoon

Almond – 10, soaked and peeled

Walnut – 1 tablespoon, chopped

Lemon juice – 1 tablespoon or as require

Method

1. Peel and chop the beetroot and carrot.

2. Soak the almonds in hot water and peel when cool.

3. Peel and chop the cucumber. Taste before using. Cucumber should not be bitter.

4. Blend chopped carrot, cucumber, beetroot, mint leaves, almond and walnut.

5. Add orange and lemon juice in the blender. Blend again till the mixture becomes smooth and frothy.

6. Taste and add more lemon juice if require. I have added 2 teaspoon more.

7. Pour the smoothie in a glass. Garnish with mint leaves and lemon wedges.

8. Serve immediately or keep it in refrigerator to serve chilled.

Notes

1. You can add pink or black salt and black pepper powder if you like.
2. Ice cubes can be added in the smoothie while blending.
3. You can add 1 – 2 tablespoon Aloe Vera gel in this smoothie.
4. If you like the flavour of fresh turmeric root add 1 inch piece chopped turmeric root while blending the smoothie.

Carrot – 1

Orange – 1

Apple – 1

Cucumber – 1

Grated ginger – 1/2 teaspoon, optional

Lemon juice – 1 teaspoon

Method

1. Clean, wash and chop the baby spinach.

2. Peel and chop the carrot and cucumber. Taste the cucumber. It shouldn’t be bitter.

3. Peel the orange and discard the seeds.

4. Peel, core and chop the apple.

5. Now blend everything in a blender till smooth.

6. You can add honey if you want. Or add rock salt or black salt and black pepper powder. Add the seasoning according to your taste.

7. Pour the mixture into your favourite glass and enjoy.

If you want your drink chilled then you can add some ice cubes in it.

Notes

1. Ginger is optional, if you don’t like gingery taste then you can omit it.

2. If you want your drink chilled use frozen fruits or add some ice cubes.

3. You can add grape, kiwi or any fruit of your choice.

4. You can add 1 tablespoon flax seed powder in it.

Corn Salad

Corn salad.
Delicious refreshing filling and healthy salad. Perfect for this hot weather.
Just mix sweet corn, parsley, tomato, cucumber and onion with a tangy delicious dressing. Topped with roasted almond and sesame seeds. And your salad will be ready in a jiffy.
Roasted crunchy almond and sesame seeds will make this salad delish.

I have mentioned above that recipe is very easy and simple. I have used 1 tablespoon almond in it but if you like more crunch then you can use 2 tablespoon sliced roasted almond. If you don’t like parsley then you can use cilantro or coriander leaves, mint, basil or any other herb of your choice.

Recipe

Sweet corn – 1/2 cup

Tomato – 2, chopped

Onion – 1, sliced

Parsley – 1/4 cup

Cucumber – 1

Lemon juice – 2 tablespoon

Vinegar – 2 tablespoon

Mustard powder – 3/4 teaspoon

Black pepper powder – 1 teaspoon

Salt to taste

Olive oil – 2 teaspoon

Almond – 1 tablespoon

Sesame seeds – 1 tablespoon

Method

1. For dressing, in a bowl mix olive oil, salt, mustard powder, lemon juice, vinegar, salt and black pepper powder. Whisk well and keep aside.

2. Dry roast the almonds and sesame seeds.
Let the almonds cool down and slice them.

3. In a bowl mix sweet corn, cubed cucumber, chopped tomatoes, sliced onion and parsley leaves.

4. Mix the dressing in it. Combine everything well.

5. Taste and add more salt and lemon juice if require.
Sprinkle roasted sliced almonds and roasted sesame seeds over it.

6. Cover and keep in refrigerator for at least 30 minutes.

Serve chilled

Enjoy……

Notes

1. If you don’t have parsley then you can use cilantro, mint, basil or any herb of your choice.

2. You can add 1 tablespoon more roasted and sliced almond if you like the crunchiness in your salad.

3. You can use broccoli, capsicum, bell peppers, carrot, radish or whatever vegetable you like.

Fruity salad with corn, cucumber, and Parsley.
A perfect dish for this scorching summer. And a great way to feed kids fruit. A chilled bowl of this fruit salad is filling, delicious and easy to make.

You can use any fruit of your choice. I have used watermelon, pineapple and mango with sweet corn, cucumber, tomato and Parsley.

You can use grapes, banana, apples, kiwi, pomegranate, orange or any fruits you have. If you don’t like Parsley then you can use mint, basil, cilantro or coriander leaves or any herb of your choice. Mix salt and pepper. Drizzle lemon juice and serve immediately or keep in refrigerator and serve chilled. Enjoy a bowl full of chilled fruity salad.

When all the members vote for salad, I thought of my favourite fruit salad. Yes I love it as lunch in this hot weather. You can adjust the pepper powder according to your taste. Use any fruit available in your pantry. Lemon juice, black salt and pepper powder will make your salad delicious.

Recipe

Sweet corn – 1 cup

Cucumber – 1 cup, diced

Watermelon – 1 cup, scooped or cubed

Pineapple – 1 cup, diced

Mango – 1 cup, scooped or cubed

Tomato – 2, small

Black salt or rock salt – 1 teaspoon

Black pepper powder – 1/2 teaspoon or to taste

Lemon juice – 2 tablespoon

Chopped Parsley – 2 tablespoon

Method

1. Chop the tomatoes in small pieces. Take only outer part. Remove the pulp or seed. Don’t discard, you can use it in the curries.

2. In a bowl add all the ingredients and chopped tomatoes. You can use halved cherry tomatoes if you want.

3. Add salt, pepper powder and lemon juice.

4. Mix well. Taste and adjust the seasoning. Add more salt, pepper and lemon juice if require.

5. Serve immediately or keep in refrigerator and serve chilled.

Notes –

1. You can use any fruit of your choice.

2. If you don’t have Parsley then you can use chopped mint leaves, basil, cilantro or any herb of your choice.

3. You can also use finely sliced 1 onion in it.

4. You can add chopped green chilli if you like your salad spicy.
