Fruity salad with dried basil.
Sharing one of my favourite and simple yet tasty and flavourful salad.
A healthy, easy to make and delicious salad.
Serve this salad with lunch or dinner or enjoy a bowl full only salad. You can add any of your favourite fruit in it. I have used apple, pear, pomegranate, sweet corn and tomato. I have also added dry roasted almond and fresh coconut to add some crunch.

Sending this salad to this week’s Foodiemonday bloghop. I am late today. My kitchen is under renovation. So I have decided to skip this week. But my lovely friend Preethi Prasad suggested me to try something. In evening when the carpenters stopped their work for today I have made this simple yet healthy and delicious salad with whatever I had in my pantry. And very happy with the taste and flavour. Thanks Preethi.

This week 212 #Foodiemonday bloghop theme is salad stories suggested by our bloghop member and very talented blogger Narmadha. Narmadha blog at Nams Corner. Check out her space for different kinds of recipes. I especially love her dessert recipes. You can also get non-veg recipes on her blog.

I have used apple, pomegranate, pear, cucumber, coconut and tomato. You can use any fruit of your choice. Finely chopped onion can be used in the salad. Sometimes I also add little garlic powder but today I have made it without onion garlic. You can also use mint leaves or cilantro/coriander leaves in the salad if you want.

Recipe

Apple – 1 small, cubed

Pomegranate arils – 1/2 cup

Pear – 1 small, cubed

Fresh coconut – 1/4 cup, finely chopped

Almonds – 2 tablespoon, dry roasted

Sweet corn kernels – 1/2 cup, boiled

Cucumber – 1 small, peeled and cubed

Tomato – 1, cubed

Pink or black salt or rock salt – to taste

Freshly ground black pepper – to taste

Dried basil – 1 teaspoon

Ginger powder – 1/2 teaspoon, optional

Lemon juice – 2 tablespoon

Vinegar – 1 tablespoon

Method

1. Slice the dry roasted almonds.

2. In a glass bowl combine all the fruits, tomato, cucumber and sweet corn.

3. Add black, pink or rock salt, freshly ground black pepper, dried basil, vinegar and lemon juice.

4. Add dry ginger powder if using. You can also use ginger julienne or grated ginger if you like the flavour of ginger.

5. Mix well. Taste and add more salt and lemon juice if required.

6. Serve immediately or keep in the refrigerator and serve chilled.

Notes
1. You can use any herbs of your choice instead of basil.
2. Finely chopped or sliced onion can be used in the salad.

Dairy Free Beetroot Smoothie With Apple Orange And Carrot

Dairy free beetroot smoothie with apple, orange and carrot.
A perfect low calorie drink with breakfast. Delicious, healthy and filling. I have used carrot, apple and orange juice in it. You can use any fruit of your choice.

You don’t need to add any sweetener in this smoothie. But you can add black salt and black pepper powder if you want. I love this smoothie both ways.

Beetroots have numerous health benefits.
Beetroot is rich in vitamins, minerals and nutrients and it without doubt is a ‘super-food’. It helps to treat anemia, indigestion, constipation, piles, kidney disorders, dandruff, gall bladder disorders, cancer and heart disease. It also helps to improve blood circulation, helps to deal with respiratory problems and even prevents cataracts.

Now coming to the recipe. Just blend everything and and your healthy and yummy smoothie is ready in a minute.

I have used orange juice but you can use grape or any other fruit juice. Add fruit juice according to your taste. Almond milk can be used instead of coconut milk.

Recipe

Beetroot – 1 boiled

Carrot – 1

Apple – 1, peeled and cored

Orange juice – 1 cup

Coconut milk – 1/2 cup

Lemon juice – 1/2 teaspoon

Cinnamon powder – 1/4 teaspoon

Finely chopped walnut to garnish

Method

1. Peel and chop the boiled beetroot.

2. Grate or finely chop the apple for easy blending.

3. Mix all the ingredients and blend until smooth and frothy. See notes for more options.

4. Pour the mixture into your favourite glass and enjoy the delicious and healthy smoothie.

Notes

1. You don’t need to add any sweetener. Smoothie is enough sweet due to the sweetness of beetroot, apple, orange and coconut milk.

2. You can add black salt and black pepper powder if you like to enhance the taste.

3. You can also add ice cubes if require.

4. Almond milk can be used instead of coconut milk.

5. You can use grape juice or any fruit juice of your choice instead of orange juice.

Green smoothie or detox drink.
Hope you enjoyed the festival of light. Enjoyed all the festive goodies, sweets and different kinds of delicacies. Right?
Now we have to detoxify our body and shed those unwanted weight.
Detox drink helps to flush out toxins and improve metabolism. Not only weight loss detox drink will make your skin glow.

This green smoothie has baby spinach, carrot, orange, apple, cucumber, ginger and lemon juice. Carrot orange and apple made the smoothie enough sweet so you don’t have to add any sweetener. But if you want your smoothie salty then you can add rock salt or black salt and black pepper powder.

You can use any fruit of your choice. Fruit gives sweetness and enhance the taste of your smoothie.

Recipe

Tender baby spinach – 1 cup

Carrot – 1

Orange – 1

Apple – 1

Cucumber – 1

Grated ginger – 1/2 teaspoon, optional

Lemon juice – 1 teaspoon

Method

1. Clean, wash and chop the baby spinach.

2. Peel and chop the carrot and cucumber. Taste the cucumber. It shouldn’t be bitter.

3. Peel the orange and discard the seeds.

4. Peel, core and chop the apple.

5. Now blend everything in a blender till smooth.

6. You can add honey if you want. Or add rock salt or black salt and black pepper powder. Add the seasoning according to your taste.

7. Pour the mixture into your favourite glass and enjoy.

If you want your drink chilled then you can add some ice cubes in it.

Notes

1. Ginger is optional, if you don’t like gingery taste then you can omit it.

2. If you want your drink chilled use frozen fruits or add some ice cubes.

3. You can add grape, kiwi or any fruit of your choice.

4. You can add 1 tablespoon flax seed powder in it.

Dairy Free Coconut Dry Fruits Overnight Oats 


Dairy free coconut dry fruits overnight oats.

For overnight oats you have to soak the oats in any kind of liquid of your choice. You can use any milk like almond milk, soya milk, coconut milk etc, yogurt or any fruit juice in equal amounts of oats.

You will love the taste of this overnight oats even if you don’t like oats. The taste is just like a dessert. I am sure you will love it.

I love overnight oats as breakfast. Because its not only delicious but very easy to make and filling, just mix everything in a jar cover and keep in refrigerator and go to sleep. You don’t need to cook anything in the busy morning. Your breakfast is already ready in the refrigerator, just take out and enjoy.

Oats is a healthy option for breakfast. Oats are loaded with Dietary fiber, more than any other grain. Oats have a range of healthy cholesterol lowering properties, helps control weight, reduces blood pressure, stabilize blood sugar, good for skin, enhances immune system, lower the risk of colon cancer.

And we all know oats as world’s healthiest food. Better way to gain the strength and energy.

I have used cashew nuts, raisin, almond and coconut. You can use any dry fruits of your choice. I have pomegranate and apple so I have added them. You can add banana or any fruit or if you like skip the fruit, make it with only dry fruits. If you don’t want to add fruit increase the amount of dry fruits.

Recipe 


Oats – 1/4 cup

Coconut milk – 1/4 cup

Honey – 2 teaspoon or to taste

Cashew nuts – 1 tablespoon, chopped

Raisins – 1 tablespoon

Fresh coconut – 1 tablespoon, finely chopped or grated

Almond – 1 tablespoon chopped

Cashew, raisin, almond, chopped fresh coconut and walnut for topping

Apple and pomegranate seeds as require

Method 


Soak the raisins in little water for few minutes. Drain and keep aside.

Mix oats, coconut milk and honey. Taste and adjust the sweetness.

Add 1 tablespoon soaked raisins, chopped almond, cashew nuts and coconut. Mix well.

Take a jar or bowl. Place chopped apple and pomegranate seeds in the jar. Pour dry fruits mixed and coconut milk soaked oats over the fruits. Cover and shake the jar and keep it in the refrigerator for overnight.

Next day take out the jar.

Top with some more chopped apple and pomegranate seeds. You can add the fruits at night but I have added some more over it before serving to retain the crunch of the freshly chopped fruits. If you like you can make it without any fruit,  just increase the amount of dry fruits. Or you can use banana or any other fruits of your choice.

Now top with some dry fruits over it. You can Garnish with dry fruits of your choice. I have used cashew, almond, raisin, walnut and chopped coconut.

Enjoy chilled as your breakfast. Or serve as a dessert.

Black rice, oats and beetroot chilla or pancake.

Very delicious and perfect for winter morning breakfast. And yes healthy too :mrgreen:

You can get some more beetroot recipes in my blog. But this time tried with black rice. I have some black rice flour which I have made for black rice double chocolate cake. So I want to use it but very happy with the taste, it was amazing. Now I have to make some more black rice flour 😁

If you don’t have black rice you can use any white or brown rice too.

Black rice is an excellent source of fiber, amino acid, minerals, vitamins and antioxidants. And its more nutritious than brown rice.

Oats are loaded with Dietary fiber, more than any other grain. Oats have a range of healthy cholesterol lowering properties, helps control weight, reduces blood pressure, stabilize blood sugar, good for skin, enhances immune system, lower the risk of colon cancer.
And we all know oats as world’s healthiest food. Better way to gain the strength and energy.

Beetroot is low in fat.  Full of vitamins, potassium, iron, nitrate and packed with powerful antioxidants. Its known as super food.

Coming to the recipe. Its very easy to make. Only mix all the ingredients. Cover and leave it for some time and make just like a pancake with little oil.

Recipe 


Black rice flour – 1 cup

Oats powder – 1 cup

Beetroot  – 1 peeled and grated

Coriander leaves – handful chopped

Green chilli – 1 – 2 finely chopped

Ginger – 1″ piece grated

Onion – 1 finely chopped, optional

Lemon – 1/2

Cumin powder – 1 teaspoon

Chat masala powder – 1 teaspoon

Garam masala powder – 1/2 teaspoon, optional

Salt to taste

Oil for shallow frying

Method 

Soak the rice flour with little water for an hour and grind into a smooth paste.

In a large bowl mix ground oats, grated ginger and beet, soaked and ground black rice flour, salt, spices, chopped onion, juice of 1/2 lemon, green chilli and coriander leaves. I didn’t use onion.

I have mentioned the process of making black rice flour here.

Add water to make a lump free semi thick flowing batter. Mix well. Cover and leave aside for 30 minutes.

Now stir the batter well. Add more water if require.

Heat a nonstick pan and grease it with little oil.

Pour a ladleful of batter in the middle. Spread it evenly to make a circular shape.

Drizzle little oil and let it cook till it leaves the sides.

Flip and cook the other side too.

Serve hot with any chutney or sauce.

Autumn, also known as fall in North American English. Autumn marks the transition from summer into winter, when the arrival of night becomes noticeably earlier while the arrival of day becomes noticeably later, and the weather becomes cooler. 

One of its main features is the shedding of leaves from deciduous trees. From September to November, the autumn harvest brings a variety of healthful and delicious produce. And our this week’s #Foodiemonday bloghop theme is #FallRecipes. My contribution is this yummy fruity muffins. 

A delicious muffins made of apple, banana, orange and cinnamon. You will love the aroma of cinnamon and mixed fruits. If you don’t have muffins moulds you can use cake tin too. Make like a cake, slice and serve. 

 Even if your kids don’t like apple or banana I am sure they will love the taste too without recognizing apple banana in it. You can use grated fresh coconut too in the batter if you like. I have sprinkle  chocochips over the muffins but you can use any nuts of your choice or tutti fruity too. 
If you want to make it more healthy use 1/2 cup oats powder instead of all purpose flour/maida. 

Recipe 


Apple – 1

Banana – 2 – 3

Orange – 1

Khoya/mawa or dried milk – 1/3 cup
 

Wholewheat flour or atta – 1/2 cup 

All purpose flour or maida – 1/2 cup 

Sugar – 1/2 cup 

Oil or butter – 1/4 cup 

Orange juice – 1/2 cup 

Orange zest – 1/2 heaped teaspoon 

Cinnamon powder – 1 teaspoon 

Baking powder – 1 teaspoon 

Baking soda – 1/2 teaspoon 

Method 


Peel and grate the apple. Heat a pan and add the grated apple and sugar. Cook on low flame. Stir continuously. Cook till the sugar dissolve and the mixture becomes thick. Now let the mixture cool down.
 Chop the bananas and blend or grind with khoya/mawa or dried milk. Keep aside. I have used 2 large bananas. 

Sieve both flour, baking powder, soda and cinnamon powder. In this recipe I have used wholewheat flour and all purpose flour/maida both. But if you want you can use only wholewheat flour/atta or all purpose flour/maida or mix half oats powder with the flour. 

In a bowl add apple and sugar mixture, oil or butter, orange zest and orange juice. Beat well. Add the dried milk and banana mixture. Mix and add dry ingredients in it. First add half of the dry ingredients and mix well. then add the remaining dry Ingredients and mix well. 

You can add 1/4 to 1/2 cup grated fresh coconut too in the batter if you like. 

Preheat the oven at 180° for 10 minutes. 

Fill the greased muffins moulds or cake tin 3/4 with the batter. Sprinkle chocolate chips or dry fruits or any nuts of your choice. 

Bake at 180° for 20 minutes or until the toothpick comes out clean. 

Serve the muffins hot or at room temperature as a dessert or with tea or coffee. 

Enjoy the heavenly aroma and taste.

Apple Coconut Fudge Or Barfi

Janmashtami is the birthday of Lord Krishna. In India it is celebrated with great devotion and enthusiasm.

This festival is observed on ashtami tithi, the eighth day of Krishna Paksha or dark fortnight of the month of Bhadra according to the Hindu calendar. This is usually in the months of August and September in the Gregorian calendar. People observe fast the whole day, sing hymns and conduct prayers at midnight to rejoice the birth of Lord Krishna.

Apple coconut fudge or barfi.

A very delicious and flavourful sweet. On the auspicious occasion  of Shree Krishna Janmashtami try out this easy to make and yummy fudge or barfi.

 

Recipe 


Grated apple  – 1 & 1/2 cup

Grated fresh coconut  – 1&1/2 cup

Sugar  – 1/4 cup

Cardamom powder  – 1/2 teaspoon

Saffron  – a pinch optional

Hot milk  – 1 tablespoon

Pistachios to garnish

Ghee/clarified butter for greasing the plate

 

Method 


Soak the saffron in 1 tablespoon hot milk. If you don’t have saffron omit it. You can use little food colour too.

Mix grated apple, grated coconut and sugar in a pan. I like less sweet but you can adjust according to your taste.

Cook the mixture on low flame. Keep stirring. Don’t increase the flame. Keep the flame low.

After 15-20 minutes when the mixture dried up add cardamom powder, milk powder and saffron mixed milk. Mix well. Taste and adjust the sugar if require.

Cook again on simmer till the mixture dried up and becomes dough like consistency. It will take 15-20 minutes again. Switch off the flame.

Take a greased plate. Spread the mixture on it. Label with a spoon or your palm. Sprinkle chopped pistachios over it.

Let it cool down. Now keep it in refrigerator for 5-6 hours or overnight.

Cut into square pieces and serve chilled.
