Gluten free, delicious and healthy dessert. This hot halwa is perfect for this cold weather. And its also a tasty and filling fasting recipe.
Nutritious buckwheat flour, low calorie Waterchestnut flour, banana, jaggery and little ghee or clarified butter made this halwa super yummy. You can add 1-2 tablespoon ghee or clarified butter more if you wish. I have used 1 ripe banana but you can use 2 bananas if you want.

Do visit her space for many wonderful recipes. I have already bookmarked her No bake biscuit nuts cake recipe. I will try it soon.

As a remedy earlier I have shared Turmeric shot with tulsi or holy basil
And Golden smoothie with turmeric and aloe vera.
There are so many other remedies like tulsi and honey. My mom used to make it daily for my daughter. Juice of tulsi or holy basil and honey protect the kids from cold.

Eating a small piece of raw turmeric with jaggery in the morning boost immune system and prevent from seasonal diseases.

Half teaspoon juice of small leaves of harsingar or night jasmine mixed with honey is a very good remedy for kid’s stomach worms. Honey will reduce the bitterness of leaves.
Harsingar leaves also have anti-arthritic properties. Boil the leaves of harsingar or night jasmine in water and strain. This water will reduce the pain and inflammation.

List is so long. This time not like remedy but sharing a nutritious dessert. Weather is too cold and this hot halwa will give some comfort and also soothe a sore throat.

Recipe

Buckwheat flour or kuttu atta – 1/4 cup

Waterchestnut flour or singhara atta – 1/4 cup

Jaggery – 1/3 cup, grated or powdered

Ripe banana – 1

Ghee or clarified butter – 2 tablespoon

Water – 1 cup

Cashew nuts – 1 tablespoon, sliced

Almond – 1 tablespoon sliced

Raisins – 1 tablespoon

Cardamom powder – 1/2 teaspoon

Pistachios to sprinkle

Method

1. Peel and mash the banana and keep aside. You can use 1 more banana if you like.

2. Heat ghee in a heavy bottomed pan or nonstick pan.

3. Add buckwheat and Waterchestnut flour. Fry on low heat until flour starts to change it’s colour. It becomes light brown and you will get a lovely aroma.

4. Add sliced cashews, almonds and raisins. Fry for a minute.

5. Add mashed banana and mixed well. Saute for a minute. Keep the heat low. Flour shouldn’t be burn.

6. Now add jaggery and water. Mix well. Break the lumps with spatula. Increase the heat and keep stirring. Cook until the mixture dried up and comes together.

7. Add cardamom powder, mix and remove from heat. You can drizzle little ghee at the end. I didn’t.

8. If you want to keep it little runny add 1/4 cup water and little more jaggery powder.

9. Garnish with sliced cashews, almonds and pistachios.
Serve hot.

Koat pitha.
Koat pitha from the beautiful state Mizoram. A delicious sweet fritter made with banana, rice flour and jaggery.

After Meghalaya sharing a recipe from Mizoram, one of the state of seven sisters state of India.
The Seven Sister States is a popular term for the contiguous states of Arunachal Pradesh, Assam, Meghalaya, Manipur, Mizoram, Nagaland and Tripura prior to inclusion of the state of Sikkim into the North Eastern Region of India.

Mizoram is a state in northeastern India, with Aizawl as its capital city. The name is derived from “Mizo”, the name of the native inhabitants, and “Ram”, which means land, and thus Mizoram means “land of the Mizos”. Within the northeast region, it is the southernmost landlocked state, sharing borders with three of the Seven Sister States, namely Tripura, Assam and Manipur.
Rice is the staple food of Mizoram, while Mizos love to add non-vegetarian ingredients in every dish. Fish, chicken, pork and beef are popular meats among Mizos. Dishes are served on fresh banana leaves. Most of the dishes are cooked in mustard oil.

This month in Shhhhh cooking secretly challenge
facebook group after Meghalaya cuisine we are sharing different dishes from Mizoram cuisine.
This month my partner is Renu Agrawal Dongre. Who blog at Cook With Renu. Do visit her space for some wonderful recipes.
We gave each other two secret ingredients. Renu gave me rice flour and jaggery. And I gave her Nigella seeds and mustard seeds. Check out her space for the delicious Panch phoran taratari recipe she shared with these ingredients.

This soft inside and crisp outside koat pitha is very easy to make. Just mash the banana well with jaggery powder, mix rice flour and make fitters with it. Serve when cool. I love cardamom and jaggery mixed flavour so added cardamom powder. But if you want authentic taste then you can omit cardamom powder.

Recipe
Rice flour – 1/4 cup

Jaggery – 1/4 cup

Banana – 2

Cardamom powder – 1/2 teaspoon, optional

Method

1. Mash the banana with a fork.

2. Add jaggery powder or grated jaggery and mix well. Make it smooth.

3. Add rice flour and cardamom powder. Mix and make a lump free thick batter.

4. Heat sufficient oil in a pan.

5. Drop a tablespoon full batter in the oil and fry on low medium heat till it becomes golden brown.

6. Turn over and fry the other side too.

7. Remove from oil and place on a paper towel.

8. Fry all the pitha this way.

9. Let the pitha cool down completely before serving.

10. Serve as a snack with tea or coffee.

Note
If you want authentic taste skip cardamom powder. I have added it for flavour.

Vegan Smoothie Bowl

Vegan smoothie bowl.
A dairy free and gluten free smoothie bowl for breakfast. And also sugar free. So diabetic and weight watchers both can enjoy it.
Easy to make, filling, healthy and delicious. A perfect breakfast option. With all the goodness and taste of banana, oats, almond, raisins, dates and coconut and the crunch of walnut and pomegranate.

I have used banana but you can use strawberry or any fruit of your choice. You don’t need any sweetener because raisins, banana and dates give enough sweetness to your smoothie bowl.

This smoothie is perfectly sweet and delicious but if you like less sweetness in your smoothie then you can reduce the amount raisins and dates. You can dry roast the oats if you want. I didn’t.

Recipe

Oats – 1/4 cup

Banana – 1

Coconut milk – 1/4 cup or as require

Fresh coconut – 2 tablespoon, chopped

Almond – 5

Date – 2, pitted and chopped

Raisins – 2 tablespoon

Walnut, raisins, pomegranate and banana pieces for topping

Method

1. Peel and chop the ripe banana.

2. Soak the almonds in hot water and peel when cool.

3. Soak the raisins in water.

4. Grind the oats. You can dry roast the oats before grinding if you like.

5. In a blender blend ground oats, chopped coconut, chopped dates, peeled almonds, soaked raisins, chopped banana and 1/4 cup coconut milk. Blend into a smooth mixture.

6. Pour the mixture into a bowl. You can add 1/4 cup more coconut milk if you want your smoothie consistency thin.

7. Top with banana slices, raisins, walnut and pomegranate arils.
Enjoy the delicious and healthy smoothie bowl. Stay healthy stay happy

Notes

1. You can use strawberry or any fruit of your choice instead of banana.
2. If you don’t like oats then dry roast the oats before grinding.

Fruity Muffins

Autumn, also known as fall in North American English. Autumn marks the transition from summer into winter, when the arrival of night becomes noticeably earlier while the arrival of day becomes noticeably later, and the weather becomes cooler. 

One of its main features is the shedding of leaves from deciduous trees. From September to November, the autumn harvest brings a variety of healthful and delicious produce. And our this week’s #Foodiemonday bloghop theme is #FallRecipes. My contribution is this yummy fruity muffins. 

A delicious muffins made of apple, banana, orange and cinnamon. You will love the aroma of cinnamon and mixed fruits. If you don’t have muffins moulds you can use cake tin too. Make like a cake, slice and serve. 

 Even if your kids don’t like apple or banana I am sure they will love the taste too without recognizing apple banana in it. You can use grated fresh coconut too in the batter if you like. I have sprinkle  chocochips over the muffins but you can use any nuts of your choice or tutti fruity too. 
If you want to make it more healthy use 1/2 cup oats powder instead of all purpose flour/maida. 

Recipe 


Apple – 1

Banana – 2 – 3

Orange – 1

Khoya/mawa or dried milk – 1/3 cup
 

Wholewheat flour or atta – 1/2 cup 

All purpose flour or maida – 1/2 cup 

Sugar – 1/2 cup 

Oil or butter – 1/4 cup 

Orange juice – 1/2 cup 

Orange zest – 1/2 heaped teaspoon 

Cinnamon powder – 1 teaspoon 

Baking powder – 1 teaspoon 

Baking soda – 1/2 teaspoon 

Method 


Peel and grate the apple. Heat a pan and add the grated apple and sugar. Cook on low flame. Stir continuously. Cook till the sugar dissolve and the mixture becomes thick. Now let the mixture cool down.
 Chop the bananas and blend or grind with khoya/mawa or dried milk. Keep aside. I have used 2 large bananas. 

Sieve both flour, baking powder, soda and cinnamon powder. In this recipe I have used wholewheat flour and all purpose flour/maida both. But if you want you can use only wholewheat flour/atta or all purpose flour/maida or mix half oats powder with the flour. 

In a bowl add apple and sugar mixture, oil or butter, orange zest and orange juice. Beat well. Add the dried milk and banana mixture. Mix and add dry ingredients in it. First add half of the dry ingredients and mix well. then add the remaining dry Ingredients and mix well. 

You can add 1/4 to 1/2 cup grated fresh coconut too in the batter if you like. 

Preheat the oven at 180° for 10 minutes. 

Fill the greased muffins moulds or cake tin 3/4 with the batter. Sprinkle chocolate chips or dry fruits or any nuts of your choice. 

Bake at 180° for 20 minutes or until the toothpick comes out clean. 

Serve the muffins hot or at room temperature as a dessert or with tea or coffee. 

Enjoy the heavenly aroma and taste.

Coffee Banana Chocolate Smoothie

Today I am very happy to publishing 50th post here.
And its a smoothie. A low calorie, healthy and yummy smoothie with coffee, banana and chocolate.

We like to start our day with a cup of hot coffee.
A cup of coffee in the morning may pack more than just an energy boost.

More and more research is emerging to suggest that there may be several health benefits associated with drinking this dark black beverage, from helping prevent diabetes to lowering the risk of liver disease.

But today its not hot. Chilled delicious low fat, low calorie healthy coffee banana chocolate smoothie.

Recipe

1 frozen banana ( sliced)

1 cup milk ( more or less depending on the desired consistency)

1/2 cup curd

1/4 teaspoon ground cinnamon

A pinch of nutmeg powder

1 teaspoon coffee powder

1 tablespoon cocoa powder

1 tablespoon honey

1 teaspoon ground flax seed powder (optional)

Method

Combine all the ingredients in a blender and blend until smooth and frothy.

You can add more milk if necessary. Add more honey if you would like the drink sweeter.
