Vegan fruity golden smoothie with fresh turmeric and Aloe Vera.
Dairy free golden smoothie with fresh turmeric, ginger, Aloe Vera gel, grapes, orange, carrot, cucumber, coconut milk and flavoured with mint and cinnamon. A perfect breakfast smoothie for weight watchers.

You don’t need to make juice of orange and carrot. Just use finely chopped or grated carrot and remove the skin and seeds of orange before using. Smoothie is enough sweet due to orange and carrot so you don’t need any sweetener.

Turmeric is known for it’s healing compounds curcumin. Ginger is high in gingerol, a substance with powerful anti-inflammatory and antioxidant properties.

Now coming to the easy and simple recipe. Just combine everything and blend till the mixture becomes smooth. I don’t like the flavour of fresh turmeric so I have added cinnamon. Because of mint leaves and cinnamon you hardly notice turmeric flavour. If you want you can omit mint or cinnamon. But I recommend to use both for a lovely flavour.

Recipe

Grapes – 1 cup

Orange – 1 large or 2 small

Carrot – 1, grated or finely chopped

Cucumber – 1, optional

Ginger – 1/2 inch piece, optional

Fresh turmeric – 1/2 inch piece

Mint leaves – few

Lemon juice – 1 – 2 tablespoon or as require

Aloe Vera gel – 1 – 2 tablespoon

Coconut milk – 1/2 cup

Cinnamon powder – 1/2 teaspoon, optional

Method

1. Peel and remove the seeds of orange. I have small oranges so used two oranges. If you have large orange then use one.

2. Peel and chop the cucumber. Taste before using. Cucumber should not be bitter.

3. Peel and grate or finely chop the ginger and fresh turmeric.

4. Combine everything, add 1 tablespoon lemon juice and blend till smooth and frothy. Taste and add more lemon juice if require.

5. Pour in your favourite glass. You can add some ice cubes in the glass if you want.

6. Garnish with mint leaves, cucumber and lemon wedges. Serve chilled or in room temperature.

Notes
1. If you want sweeter smoothie omit the cucumber
2. If you don’t like cinnamon then you can skip it.
3. Add lemon juice according to your taste.

Egg in green curry or chutney curry.
Bored of regular egg curry? Try this different and delicious curry with all the green chutney ingredients. If you don’t like eggs then you can make it with potatoes, cauliflower or any vegetables. See note for the method.

Yes here is one more recipe of egg which is called super food specially in winter.

And now coming to the low calorie cherry tomatoes. These tomatoes always makes your salad and other foods beautiful and attractive.
1. Cherry tomatoes are rich in a number of nutrients that are good for your health.
When you’re trying to lose weight, the key is to eat foods that keep you full without costing you too many calories. Ten cherry tomatoes, which is about a cup, has only 30 calories. If you’re on a 1,500-calorie diet, those 10 cherry tomatoes only meet 2 percent of your daily calorie needs.

2. In addition to being low in calories, the red veggie is also a good source of fiber with 2 grams in the 1-cup serving. Even if you’re not counting calories to lose weight, making it a point to add more fiber to your diet may help you drop a few pounds, according to study published in the Annals of Internal Medicine.
3. Ten cherry tomatoes has almost as much potassium as a medium banana with 400 milligrams. Eating more potassium-rich foods may help lower your blood pressure.

And not only healthy, this curry is also lip-smacking. If you want your curry more spicy then increase the number of green chilli. The curry taste spicy and fingerlicking.

Recipe

Egg – 3 – 4, hard boiled

Tomato – 2 medium, chopped

Green chilli – 2 – 3 or to taste

Cilantro or coriander leaves – 1 cup, chopped

Mint leaves – 1/2 cup

Garlic – 3 – 4 cloves

Ginger – 1 inch piece

Sweet corn – 1 cup, boiled

Cherry tomatoes – 10 – 15 or 1 cup

Onion – 1 large, sliced

Salt to taste

Turmeric powder – 1/4 teaspoon + 1/4 teaspoon

Cumin powder – 1 teaspoon

Coriander powder – 1/2 teaspoon

Oil – 2 – 3 tablespoon

Water – 1 & 1/2 cup

Method

1. Grind tomatoes, cilantro, mint leaves, green chilli, garlic and ginger. Make a smooth paste.

2. Make some slits on hard boiled eggs with a knife and marinate with little salt and 1/4 teaspoon turmeric powder.

3. Heat oil in a pan or wok. Fry the marinated eggs. When the eggs becomes golden brown, remove from oil keep aside.

4. In the same oil add sliced onion.
Fry till onion becomes brown.

5. Add the ground paste. Add salt, cumin powder, coriander powder and turmeric powder.
Saute till oil leaves the sides.

6. Add cherry tomatoes and boiled sweet corn. Saute for one minute.

7. Now add fried eggs and water.
When it starts to rolling boil reduce the heat.

8. Cook on simmer for 15 minutes. If you want your gravy more thick cook for some more time.

9. Remove from heat.

10. Curry is already colourful because of sweet corn and cherry tomatoes. You can garnish with chopped cilantro or mint leaves.

Serve hot with steamed rice, pulao, jeera rice, roti, paratha, naan or any bread.

Notes

1. If you don’t like eggs then you can make it with any vegetable. You can add boiled and fried baby potatoes or cubed potatoes, fried or sauteed cauliflower, broccoli, or any vegetable of your choice.

2. Use chilli according to your taste.

Chutney Idli

Chutney idli.
A delicious soft steamed breakfast dish made with semolina or suji and coriander or cilantro chutney ingredients. You can serve it with any chutney or dip. But its taste great without anything. So it can be serve as snack.

Normally idli batter need to be fermented.
According to Wikipedia Idli or idly are a type of savoury rice cake, popular as breakfast foods throughout India and northern Sri Lanka. The cakes are made by steaming a batter consisting of fermented black lentils (de-husked) and rice. The fermentation process breaks down the starches so that they are more readily metabolized by the body.
But you don’t have to soak, grind and ferment to make these idli.

A quick and easy to make idli. Just mix roasted semolina and chutney ingredients. Wait for only 10 – 15 minutes and steam. Delicious, soft and fluffy idli will be ready in few minutes.

Now coming to the recipe. I don’t like garlic much so I didn’t use it. But if you love garlic flavour then you can add 1 – 2 cloves garlic while grinding the cilantro and mint leaves.
You can use more lemon juice if you want your idli tangy.

Recipe

Semolina or suji – 1 cup

Curd – 1/2 cup

Salt to taste

Cumin powder – 1 teaspoon

Chaat masala powder – 1 teaspoon

Lemon juice – 2 teaspoon

Ginger – 1/2 inch piece

Green chilli – 1 – 2

Cilantro or coriander leaves – 1 cup

Mint leaves – 1/2 cup

Rai or mustard seeds – 1 teaspoon

Curry leaves – 10 – 12, chopped

Oil – 1 tablespoon

Eno – 1 teaspoon

Method

1. Heat oil in a pan. Add rai or mustard seeds and let it splutter. Add curry leaves, stir and add semolina or suji. Fry for 2 – 3 minutes. Don’t make the semolina brown. Semolina shouldn’t change it’s colour.

2. Remove from heat and let it cool down.

3. Whisk the curd and keep aside.

4. Grind cilantro or coriander leaves, mint leaves, ginger and green chilli altogether. Make a smooth paste with little water.

5. In a large bowl mix roasted semolina, curd, salt, cumin powder, chaat masala powder and ground mixture. Add water as require to make a semi thick mixture. Make a pouring consistency. Cover and keep aside for 10 – 15 minutes.

6. After 10 – 15 minutes check the consistency if it too thick add little more water to get the required consistency.

7. Grease the idli mould.
Heat water in a steamer.

8. Just before steam add eno and give a good stir.

9. Pour the batter in greased idli moulds.

10. Steam for 12 – 15 minutes or until the toothpick comes out clean.

11. I have made these in microwave. If you are using microwave steam it on full power for 6 minutes.

12. Serve hot idli with peanut chutney, onion tomato chutney or dip.

Notes

1. You can add 1 – 2 garlic cloves while grinding coriander mint leaves if you want.

2. You can use more lemon juice if you like your idli tangy.

3. Use chillies according to your taste. You can add 1 – 2 chilli more if you like your idli spicy. Or you can omit chilli if you are making it for kids.

Water Chestnut Or Singhara Chutney Or Dip 

Water chestnut or singhara chutney or dip.

A delicious tangy chutney. First time tried with singhara or water chestnut and very happy with the taste. Its a hit in my family.

Water chestnut is full of vitamins and minerals. Not only that, nutrients rich water chestnut is cholesterol free.

When looking for cholesterol-free and fat-free foods to add to your meal plans, water chestnuts fill the bill. You can lower your risk for heart disease and stroke by maintaining your blood cholesterol level, and adding water chestnuts to your meals can help you do this. Water chestnuts’ zero fat content may help you prevent weight gain when adding them to your diet.

A big thank to Rohit Srivastava for the idea. We were talking about water chestnut. Maximum people love boiled water chestnut with spicy dhania or cilantro chutney.

So here is a mix match. Water chestnut with cilantro, mint, tomato, lemon juice and and some spices.

You can enjoy this spicy tangy chutney with your food or make it a sandwich spread.

Recipe


Singhara – 10 – 12

Chopped cilantro or coriander leaves – 1 cup

Mint leaves – 1/2 cup

Tomato – 1, chopped

Garlic – 3 – 4 cloves

Ginger – 1/2 inch piece

Green chilli – 2 – 3, chopped

Salt to taste

Chaat masala powder – 1 teaspoon

Cumin powder – 1 teaspoon

Lemon juice – 2 tablespoon or to taste

Method


Peel and chop the water chestnut or singhara.

Clean and rinse mint leaves and cilantro.

Grind water chestnut, cilantro, mint leaves, tomato, garlic, ginger and green chilli.

Add salt, cumin powder, chaat masala powder and lemon juice. Blend the mixture again.

Taste and adjust the seasoning. Add more salt and lemon juice if require.

Enjoy with your snacks or use it as a sandwich spread.

Serve immediately or keep in refrigerator for later use. You can keep in refrigerator for 7-8 days.
Note –

Add green chilli according to your taste.
