Osmania Biscuit from Hyderabad, Telangana cuisine.
Delicious buttery Biscuit flavoured with cardamom and saffron. Not only tasty and flavorful but colour of saffron made these biscuits attractive.

Osmania Biscuit is a popular tea biscuit in Hyderabad, Telangana, India.It is named after the last Asaf Jahi ruler of Hyderabad State, Mir Osman Ali Khan.
The biscuits were first baked on the demand of the last Nizam of Hyderabad, Mir Osman Ali Khan, who wanted a snack that was a little sweet and a little salty. Today, the evning chai is incomplete without these biscuits anywhere in the city. With the growth of Hyderabad as an IT hub, people from all over India were exposed to this unique biscuit and as a result of this, Osmania Biscuits are now on the list of anyone who comes to Hyderabad or goes back to his hometown. Variations of Osmania Biscuits exist in other states too; in Chennai, a biscuit that is known as ‘Butter Biscuit’ is almost similar.

I have made these yummy biscuits with saffron and milk powder. These biscuits are perfect to serve with tea or coffee.

Recipe

Maida or refined flour – 1 cup

Soya bean flour – 1 tablespoon

Milk powder – 3 tablespoon

Butter – 1/3 cup

Powdered sugar – 1/3 cup

Baking powder – 1/4 teaspoon

Cardamom powder – 1/2 teaspoon

Milk – 2 tablespoon + 1 tablespoon

Saffron – 1/4 teaspoon

Salt – a pinch

Maida for dusting

Method

1. Lightly dry roast the soybean flour and keep aside to cool down.

2. Mix saffron with 2 tablespoon warm milk and keep aside.

3. Line a baking tray with parchment paper.

4. Preheat the oven at 180° for 10 minutes.

5. In a bowl mix maida or refined flour, milk powder, dry roasted soybean flour, salt, baking powder and cardamom powder.

6. Cream butter and sugar powder well. Use room temperature butter.

7. Add all the dry ingredients and 1 tablespoon milk.
Combine everything and make a smooth dough.

8. Dust little flour and roll the dough. Don’t make too thin. Keep 1/4 inch thick sheet.

9. Cut the sheet with medium sized round cookie cutter.

10. Arrange the round biscuits on lined baking tray.

11. Spread saffron mixed milk over all the biscuits with the help of a brush or spoon.

12. Bake in preheated oven at 180° for 20 – 22 minutes or until the edges start to become brown.
Let the biscuits completely cool down before serving. Enjoy with your tea, coffee or a glass of milk.

Semolina Cake / Suji Cake / Rawa Cake

Suji/rawa or semolina cake.
A cake with all the ingredients we use on sankranti. Loaded with dry fruits, mawa, til or sesame seeds, coconut and flavoured with cardamom and caramel. In Bengal we use khoya/mawa or dried milk, sesame seeds, coconut and dry fruits to make sankranti delicacies. Usually we make a stuffing for our puli pithe with these ingredients. And we use khajur gur or date palm jaggery in this stuffing. I have very little date palm jaggery in my pantry this time so didn’t use jaggery in the cake but drizzled little jaggery syrup on the cake. And it enhanced the flavour and taste. But if you don’t have date palm jaggery then you can skip it.
I have made it with suji or semolina but you can use any flour of your choice.

In dry fruits I have used 2 heaped tablespoon each chopped cashew, raisins, almond, walnut, tutti fruity, candied cherry, you can use any dry fruits of your choice. Make small pieces and use 3/4 – 1 cup mixed dry fruits. I have used my blender to mix sugar with all the other ingredients. So normal granulated sugar is perfectly fine, no need of powdered sugar.

I have made it two times. First one in round cake pan. Used refined flour or maida with semolina. Sprinkle til/sesame seeds and tutti fruity over the cake. Look at the crumb. Cake taste amazing.

And second time used my bundt pan. Used whole wheat flour or atta instead of refined flour. Sprinkled sesame seeds and tutti fruity in the greased and flour dusted bundt pan and poured the batter over it. You can also make upside down cake in a round cake pan this way.

The pictures are simple and mostly unedited. And which is my best recipe? Let’s decide it my readers. But my fellow bloggers and bloghop members said don’t skip and don’t think about cover, just post your recipe. Thanks friends. So here is a delicious and festive cake recipe for my readers with the pictures without any editing. Pictures are simple but taste of this cake is awesome. I am sure you will love the taste.

Recipe

Suji or semolina – 1 cup

Flour – 1/2 cup + 1 tablespoon

Cardamom powder – 1 teaspoon

Khoya/mawa or dried milk – 1/2 cup

Milk – 1/2 cup + 2 tablespoon

Oil – 1/2 cup

Baking powder – 1 teaspoon

Baking soda – 1/2 teaspoon

Thick yogurt – 1/4 cup

Granulated sugar – 1 cup

Caramel essence – 1 teaspoon, optional

Desiccated coconut – 1/2 cup

Cashew nuts – 2 tablespoon, chopped

Raisin – 2 tablespoon

Walnut – 2 tablespoon, chopped

Almond – 2 tablespoon, sliced

Tutti fruity – 2 tablespoon

Candied cherry – 2 tablespoon, chopped

Or

Chopped mixed dry fruits – 3/4 – 1 cup

Sesame seeds and tutti fruity to sprinkle

For jaggery syrup

Khajur gur or date palm jaggery – 1/4 cup, grated

Water – 1 tablespoon

Method

1. Grease a cake pan with oil and dust with flour or line with parchment paper.

2. Preheat the oven at 180° for 10 minutes.

3. Chop the raisins into half and mix with all the chopped dry fruits and 1 tablespoon flour.

4. In a blender blend mawa or dried milk, yoghurt, sugar, suji or semolina, milk, cardamom powder, dessicated coconut and oil. You can use your hand blender to blend. I have used soft homemade mawa. Get the mawa or dried milk recipe here.

5. Blend everything well.

Take out the mixture in a large bowl. Add flour and mix well. Make a lump free batter and keep aside for 30 minutes.

6. Now add baking powder and soda. Mix well.
Fold in the dry fruits.

7. If you are using a round cake pan pour the mixture into the pan. Tap the pan gently to remove air bubbles.

8. Sprinkle some sesame seeds or til. But this step is optional, you can skip it if you like.
Sprinkle tutti fruity over it.

9. Or you can make upside down cake. And if you are using bundt pan sprinkle sesame seeds and tutti fruity in greased and flour dusted bundt pan.

10. Pour the batter over it. Tap the pan 3-4 times.

11. Bake in preheated oven at 180° for 35 – 40 minutes or till the toothpick comes out clean.
Let it cool down.

12. In a pan heat date palm jaggery and +1 tablespoon water. Boil till jaggery dissolve completely. Let it cool down.

13. Turn out the cake into a plate.

14. Drizzle with date palm jaggery syrup.
Slice and enjoy the heavenly taste.

Notes

1. Jaggery syrup is optional. Cake also taste great without it.
2. You can use any flour of your choice with suji or semolina. Like whole wheat flour or atta, refined flour or maida or you can also use any gluten free flour.
3. Cake can be made with any flour instead of suji or semolina.
4. Sugar will be mixed with other ingredients in blender so normal granulated sugar can be used.

Khajur Or Fried Biscuits

Khajur or khajuria from Bihar.

A quick and easy to make delicious sweet deep fried cookie type snack. You can serve it with milk tea coffee or enjoy on your munching time.

This post is going to be a part of 169 #Foodiemonday bloghop #beginnersrecipe theme.

In this theme we have to share our first recipe we cooked. Thanks Amrita for the suggestion. This theme reminds me of my childhood days. A little girl of class 5th as I remember who didn’t know anything about cooking her naughty younger brother Maa Baba. Missing badly those days. Maa baba brother all left me. Its so painful but your memories are a treasure for me.

In school I remember there was a test of cooking. Every student got some ingredients and a dish name to cook. Everyone had to make different dishes. Teacher asked me to make khajur. And I was shocked, my reaction was ‘what’s that’? That time in my knowledge khajur is a Hindi or Urdu word for date. So how could I cook it? One of my friend came to rescue. She said “don’t worry let me make my dish then I will make your too”. And she made both our dishes. Don’t know where is she now. God bless her. That day I learned my first dish and after returning home made it under my mother’s supervision. And I still remember their surprised faces after tasting it. This week our bloghop group made me really nostalgic.

Now coming to the recipe. You need very few ingredients and quick process to make this delicious crispy sweet snack. Just mix everything and Knead a dough. Shape them and fry. Isn’t easy? 😊

I have used refined flour or maida but you can use whole wheat flour or atta if you want.

Recipe

Refined flour or maida – 1 cup

Semolina or suji – 1/2 cup

Ghee or clarified butter – 3 tablespoon, melted

Cardamom powder – 1/2 teaspoon

Powdered sugar – 1 cup

Desiccated coconut – 1/2 cup

Milk – 1/3 cup or as require to make a stiff dough

Oil for deep frying

Method

1. In a large bowl mix refined flour, semolina or suji, sugar, cardamom powder, desiccated coconut and melted ghee or clarified butter.

2. Mix everything well with your palm and finger tips.

3. Add milk slowly and Knead a stiff dough. Don’t add much or the dough will be sticky. But in case your dough becomes sticky, you can add little more flour and semolina.

4. Make small balls. Shape them with your hands or mould. I have used my sandesh mould. Or you can roll with a rolling pin and cut with your favourite cookie cutter.

5. Heat sufficient oil in a pan. When heated lower the flame.

6. Slide 4 – 5 khajur in the hot oil. Don’t over crowded. Fry the khajur on low heat till golden brown.

7. Flip and fry the other side too. Keep the flame low.

8. Remove from oil and let them cool down completely. After cooling khajur becomes crisp.

9. Keep the khajur in airtight container. You can keep them in room temperature for 10 – 12 days.

10. Serve with milk, tea or coffee.

Notes

1. You can fry the khajur in ghee or clarified butter if you want.

2. If you like less sugar add 3/4 cup powdered sugar.

4. You can add powdered almond or cashew in the dough if you like.

5. You can use whole wheat flour instead of refined flour.

Flavoured American Biscuit 

Flavoured American biscuit.

First time tried these biscuits and love the texture and taste.  So tried again with lightly flavoured with Italian herbs. You can enjoy these savoury biscuits with jam or gravy.

A biscuit in the United States and parts of Canada, is a variety of small baked goods with a firm browned crust and a soft interior. They are made with baking powder or baking soda as a chemical leavening agent rather than yeast. They are similar to British scones or the bannock from the Shetland Isles.

Biscuits, soda breads, and cornbread, among others, are often referred to collectively as “quick breads,” to indicate that they do not need time to rise before baking.

First time I saw these biscuits in a food group. And tempted to try it. Thanks to Pat Clark Royalty, Nathalie Dupree and Rosie Dore for the great help. You introduced me to these delicious biscuits. Everyone in my family loved these.

Recipe is very easy and simple. Refined flour is used in it. But next time I will try with whole wheat flour. I have made these with lightly flavoured. If you like you can increase the amount of herbs for strong flavour. See notes for it.

Recipe


All purpose flour or maida – 2 cup

Baking soda – 1/4 teaspoon

Baking powder – 1 tablespoon

Salt – 1 teaspoon

Unsalted butter – 6 tablespoon, chilled

Butter milk – 1 cup

Garlic powder – 1 teaspoon

Origano – 2 teaspoon

Red chilli flakes – 1/2 teaspoon

Method


1. Preheat your oven at 180°.
2. Combine all purpose flour, salt, baking soda, baking powder, garlic powder, origano and red chilli flakes in a bowl.
3. Cut the butter into chunks and mix it into the flour with your fingers until it resembles course meal.

If using a food processor, just pulse a few times until this consistency is achieved.
4. Add the buttermilk and mix just to combined.

If you feel the mixture dry add a bit more buttermilk. It should be very wet.
5. Turn the dough out onto a floured board.
6. Pat very gently. (according to original recipe it should not be  rolled  with a rolling pin) but I have used rolling pin. Next time I will follow as directed in the original recipe. Pat or roll the dough out until it’s about 1/2″ thick. Better don’t use rolling pin.
7. Fold the dough about 5 times, gently press the dough down to a 1 inch thick.
8. Use a round cutter to cut into rounds.

Don’t twist, cut the biscuits directly down.
9. You can gently knead the scraps together and make a few more, but they will not be anywhere near as good as the first ones.
10. Place the biscuits on a cookie sheet, if you like soft sides, put them touching each other.

If you like crusty sides, put them about 1 inch apart- these will not rise as high as the biscuits put close together.
11. Bake for about 10-12 minutes- the biscuits will be a beautiful light golden brown on top and bottom.

Do not overbake.

Notes –

1. Handle the dough gently. Don’t knead much.

If you have food processor you can use it.
2. If you want fresh biscuits you can cut the dough and place on a cookie sheet and freeze. Bake for 20 minutes when required.
3. Now I am copy pasting the words as Pat Clark Royalty directed to make these –

Remember: cut to pea like consistency. Pat to oblong. Fold into thirds. Pat again. Fold again. Cut biscuits directly down. Don’t twist the cutter. Done. Don’t make too thin.

Leftover: split, butter, cut side down in hot pan to brown.

4. If you don’t have buttermilk mix 3/4 cup curd and 1/4 cup water or mix 1 tablespoon vinegar or lemon juice in 1 cup milk, keep aside for 5 – 10 minutes to get the perfect buttermilk.
5. If you want strong flavour use 2 teaspoon garlic powder and 1 tablespoon origano. Add chilli flakes according to your taste.

6. My Indian readers if you make the dough soft and smooth not wet and roll out thin then it will be just like khasta mathri like snack. You can try if you like.

Biscuit Roti / Kachori 



Biscuit Roti is a very popular udupi snack.

Enjoy hot or cold its delicious in both ways. Crisp, fluffy, spicy and slightly sweet biskuit roti can be serve in breakfast or pack it for tiffin. It will be fluffy and crispy when cool as well.

These are deep fried snacks just like North Indian kachodi. Outer layer is made of wheat flour and stuffed with spicy semolina or suji mixture.

Udupi cuisine is a cuisine of South India.

I love these crispy fluffy spicy stuffed puri. 

I have made it half refined flour and half whole wheat flour. You can use only refined flour too.

You can make it as a party snack. You don’t need to make it after guest’s arrival like puri or kachori because it will perfect fluffy and crisp when cool. You can store in airtight container for 2 – 3 days.






Recipe


For the dough


Maida or refined flour – 1/2 cup



Atta or whole wheat flour – 1/2 cup



Salt – 1/2 teaspoon



Hot oil – 2 tablespoon



Turmeric powder – 1/4 teaspoon



Water – 1/3 cup



For stuffing


Semolina or suji – 1/2 cup



Oil – 2 tablespoon



Mustard seeds – 1/4 teaspoon



Curry leaves – 8 – 10 , chopped



Grated ginger – 1 teaspoon



Green chilli – 1 chopped



Cilantro or coriander leaves – 1 heaped tablespoon, chopped 



Salt to taste



Sugar – 1 – 2  teaspoon or to taste



Cumin powder – 1/2 teaspoon



Coriander powder – 1/2 teaspoon



Sambhar masala – 1 tablespoon



Turmeric powder – 1/4 teaspoon



Red chilli powder – 2 teaspoon



Oil for frying






Method


In a bowl mix whole wheat flour or atta, refined flour or maida, salt, turmeric powder and hot oil. Mix well with hand. 


Add water and make a firm pliable dough. Hot oil will make your biscuit roti crispy.

Cover and keep aside.



Heat oil in a pan. Add mustard seeds and let them splutter.



Now add chopped curry leaves. I have used dried curry leaves so I have crushed the leaves.



Add grated ginger and chopped green chilli. Saute for few seconds.



Add semolina or suji, cumin powder, coriander powder, sambhar masala, turmeric powder, salt, sugar and red chilli powder. I have used kashmiri red chilli powder. If you like hot you can use normal red chilli powder.



 Saute for 2 – 3 minutes or until semolina and spices mix well. Remove from heat and let it cool down.



Take lemon size ball from the dough. Roll out the ball with rolling pin. Make circle of about 3 inches diameter. 



Place 1 tablespoon semolina stuffing in the middle.

Now bring the edges together with your fingers. Close the edges and make a ball again. Make sure that the stuffing completely sealed.

There should be no hole because holes will absorb oil. 



Roll it again. Make a flat circle of 3 inch diameter. Roll out gently. 



Heat enough oil for frying. Let the oil properly heat up.

Fry the biscuit roti on medium heat.



Slid the puri in hot oil. Gently press with a slotted spatula.

When the puri puffed up flip and fry other side. 

Fry till golden brown from both the sides. 



Serve fluffy, spicy and crispy puri with tea or coffee.

Or store in airtight container for 2 – 3 days to use as a snack.



Notes

1. If you want your biscuit roti sweeter, add 2 tablespoon sugar.

2. You can use grated coconut in the stuffing with semolina. If you are using coconut don’t store. 

Its too yummy so you don’t have to store 😀

3. You can also use only refined flour or maida instead of half refined flour half whole wheat flour.

Chocolate Cake With Orange Crunch And Glaze 


Eggless chocolate cake with orange crunch and glaze.

A superbly delicious chocolate cake topped with orange flavoured crunch and orange glaze. Gorgeous isn’t it 😀

I love the mixed flavour of orange and chocolate. I have already shared chocolate filled orange muffins. Get the recipe here 👇

Orange muffins 

This eggless chocolate cake is all-time favourite amongst my family and friends. very easy to make yet yummy, soft and moist. You can enjoy this without any frosting, crunch or glaze. I have adopted this chocolate cake recipe from Zee Bangla Rannaghar.

Our this week’s 79th  #Foodiemonday bloghop theme is #Valentine. So giving some gorgeous look to the chocolate cake with some delicious ingredients like oranges, almonds and orange cream cookies etc.

Yes I have used these orange cream cookies to make the crunch. And the taste is awesome.

Normally Graham Crackers are used to make the crunch. But its not available here. You can use any cookies or biscuits for the crunch. If you don’t have these orange cream cookies use any digestive biscuits. Just check the sweetness and add little more if require.

I have used 1 tablespoon unsalted butter to add some moisture but you can omit it.

Glaze is made of orange juice, zest and powdered sugar. I have used little orange food colour. If you are making it for kids you can make it without colour too. I have added to beautify the cake for this Valentine special event 😁

Recipe 


For the crunch
Orange cream cookies – 1 cup crushed

Almonds – 1/2 cup

Orange zest – 1 teaspoon

Sugar – 1/4 cup

Unsalted butter – 1 tablespoon

For the cake 


Refined flour/maida – 1 & 1/2 cup

Powered sugar – 1 cup

Oil – 1/2 cup

Milk – 1 cup

Vinegar – 1 tablespoon

Cocoa powder – 2 tablespoon

Baking soda – 1/2 teaspoon

Baking powder – 1/2 teaspoon

Vanilla essence – 1 teaspoon

For the glaze
Powered sugar – 1/2 cup

Freshly squeezed orange juice – 2 tablespoon

Orange zest – 1/2 teaspoon

Orange food colour – a pinch, optional

Method

Dry roast the almonds until its change it’s colour and becomes fragrant. Let it cool down.

Blend or grind the almonds with sugar and orange cookies.

Take out the mixture in a bowl. Mix orange zest and butter in it. I have used butter to get some moisture in the mixture. You can omit it if you like.

Mix everything well.

Grease a baking pan and dust with flour. If you are using nonstick pan, just lightly grease the pan.

Spread the crunch mixture on the bottom of the pan and wall too. Press with your fingers to set well. Keep the pan aside.

Preheat the oven at 180° for 10 minutes.

Mix vinegar in lukewarm milk and keep aside.

In a bowl sift together flour, baking powder, soda and cocoa powder.

In a bowl whisk together oil and sugar. I have used rice bran oil but you can use olive oil or any white oil.  Add vinegar mixed milk in the  oil sugar mixture. Whisk again.

Add vanilla essence. Mix well. Then gradually mix the dry ingredients. Mix everything and make a smooth lump free batter.

Now pour in the prepared cake tin. Bake for 30 – 40 minutes or till the toothpick comes out clean. Check once after 30 minutes. Time depends on the oven.

Take out the cake from the pan when slightly warm. Place on a plate upside down.

Let it cool down completely.

In the meantime prepare the glaze. In a bowl mix powered sugar, grated orange zest, orange food colour and orange juice. Beat well until smooth.

Pour the mixture over upside down cake.

Garnish with orange slices and Choco chips.

Janmashtami is around the corner. So our this week’s #Foodiemonday #bloghop theme is Janmashtami special. My contribution is a lip-smacking sweet dish malpua.

Malpua is everyone’s favourite in my home. Its basically a deep fried pancake. These are fried till the edges becomes crisp then soaked in sugar syrup and garnished with pistachios and served warm with rabri or thickened milk.

Malpua is an Indian sweet dish.  There are many variations of this sweet based on the region it is prepared.

It is served as a dessert or a snack and very popular in India and Bangladesh.

In West Bengal , Bihar, Uttar Pradesh, Maharashtra its made for the festival like Sankranti and Holi. In Orissa it is served as the prasad of Lord Jagannath.

Malpua is prepared in every Bengali homes. To make this lip-smacking dish you need only flour, milk, Semolina/suji, sugar, water and cardamom powder.

I am sharing my mom’s recipe. Soft in the middle and crisp outside yummy malpua.

Recipe 


All purpose flour/maida – 1 cup

Milk powder – 1/2 cup

Semolina/suji – 2 tablespoon

Atta or wholewheat flour  – 1/4 cup

baking soda – 1/4 teaspoon

Cardamom powder – 1/2 teaspoon

milk – 2 cup

For sugar syrup

Sugar – 1 cup

Water – 1 cup

Cardamom powder – 1/4 teaspoon
Oil or ghee/clarified butter for frying

Method 


In a large bowl mix all purpose flour/maida, wholewheat flour/atta, Semolina/suji, milk powder and 1/2 teaspoon cardamom powder. You can add 1/2 to one teaspoon fennel seeds or saunf if you like. I have forgotten to add 😀

Add 1 and 1/2 cup milk gradually and mix well. Make a batter without any lumps and keep aside.

Add sugar and water in a pan and let it boil. When it starts to boil reduce the flame. Let it boil on low flame for 10 minutes. Stir occasionally. After 10 minutes switch off the flame and add the cardamom powder. Mix well.

Now give a good stir to the batter. It should be a flowing batter. If require you can add more milk. If you want your malpua thick and fluffy keep the batter thick. Don’t add extra Milk.

But for thin and crisp malpua make the batter thin by adding 1/2 cup more milk. Add baking soda and mix well.

Heat sufficient oil or ghee/clarified butter in a pan. Drop one ladle full in the middle of the oil. Fry it on low medium flame till the edges becomes crisp and brown. Flip it and fry the other side too.

Slide the hot fried malpua in the sugar syrup. Press with a spoon and flip it. Dip in the syrup with the spoon and remove it to a plate. Don’t keep it in the sugar syrup for long time. Just dip flip and press with the spoon and remove from sugar syrup.

Make all the malpua this way. Serve hot with rabri or reduced milk. You will love it without rabri/reduced milk too.
