Stir Fried Rice Noodles

Stir fried rice noodles with sweet corn. A very easy yet delicious recipe with rice noodles. It’s a completely vegetarian recipe made with thinly sliced carrot and sweet corn and capsicum only. But you can use bell peppers, cabbage, scallion or onion green or any vegetable of your choice.

You can also add egg bhurji or scramble eggs or stir fried chicken in this recipe. You can use minced chicken or small pieces of chicken. I usually like to make this noodles with eggs. Make egg bhurji or scramble egg and keep aside. Add in the dish while adding noodles. Simple isn’t it?

Usually stir fried rice noodles, also known as Pad Thai, is a popular and delicious Thai dish that can be made with a variety of ingredients. This dish typically consists of rice noodles stir-fried with eggs, shrimp, chicken, vegetables and a flavorful sauce. It’s a quick and easy meal that can be customized according to your tastes.

Recipe

Rice noodles – 150 gram

Onion – 1, sliced

Garlic – 2-4 minced

Capsicum – 1, thinly sliced

Carrot – 1/4 cup, julienne

Sweet corn – 1/4 cup

Green chilli – 1, chopped, optional

Oil – 2 tablespoon

Vinegar – 1 tablespoon

Soya sauce – 3/4 teaspoon

Sriracha sauce – 1 tablespoon

Tomato ketchup – 1 tablespoon

Salt to taste

Method

1. Boil the rice noodles as directed on the package. Don’t overcook. Drain the water and rinse with tap water. Smear the noodles with 1 teaspoon oil. Spread the noodles on a plate.

2. Heat oil in a pan. Add minced garlic and sliced onion. Fry till onion becomes translucent.

3. Add thinly sliced carrot and saute for a minute again. Add sweet corn and capsicum. I used frozen sweet corn. If you are using fresh sweet corn, boil the sweet corn before using. Saute for 2 minutes. Vegetables shouldn’t be overcooked. Watch video recipe for details.

4. Add vinegar, soya sauce, sriracha sauce and tomato ketchup. Mix well Add rice noodles and mix. Add salt carefully. All the sauce includes salt. Mix everything well.

5. Saute for 2 minutes. Taste and adjust salt if required. Toss well and serve hot.

Notes

1. You can use bell peppers, cabbage, scallion or any vegetable of your choice.

2. Chicken, eggs or shrimp can be used in this noodles. To use eggs, make egg bhurji or scramble eggs and add in the prepared noodles.

3. You can use any noodles instead of rice noodles following this recipe.

4. If you don’t have sriracha sauce then you can use any chilli garlic sauce.

Ingredients

  • 1 Capsicum Thinly sliced
  • 1/4 Cup Carrot Julienne
  • 1/4 Cup Sweet
