Broccoli almond cheese soup.
A healthy and delicious soup by Vishal Amin. Always amazed by his food photography and recipes. Super talented Vishal is not only avid cook but a businessman, excellent photographer, musician and traveller.
I saw this soup on Instagram and requested Vishal to share the recipe with my readers.

‘Railway Mutton Curry’
The dish that introduced me to Sujata Roy.
This dish was suggested by my sister as it was her most favourite mutton back in days when she was a non-Vegetarian.
I searched for it in a food group and I saw ‘Batter Up With Sujata’
And I fell in love with the story that she had narrated about ‘Railway Mutton Curry’. As my sister had told me the same history about this dish.
I was even more amazed after making the dish following Sujata Roy’s recipe of the same.
She is not just a Home Cook. She is a Mother who is a Home Chef. And you see a lot of that love on her face! I feel, there’s no better chef in the world than a Mother.

I, Vishal Amin, am a businessman involved in the manufacturing sector. Different food ingredients interested me from my childhood. It was my Mom’s wish to make me extremely Independent from young age. One fine Sunday morning, she handed me a pan and few eggs. And said ‘Mr Amin’, make your own breakfast. And I was only 10.
I can’t believe that I managed to make an Omelette but turned it into Bhurji without salt 🙂

But yes, from that day began my love story with cooking! For the last few years it has become my passion.

Yes, I experiment a lot in the kitchen. So I am a Home Cook who loves to chop onions a lot.
My biggest winner is that, ‘I never make same mistakes twice’

Today I am presenting a simple bowl of hearty ‘Broccoli Almond and Cheese Soup’
A simple recipe which is easy to follow for anyone.

Broccoli Almond Cheese Soup

Recipe

Broccoli – 400 gram

Onion – 1 (Finely Chopped)

Garlic cloves – 2 (Finely Chopped)

Soaked Almonds – 10

Vegetable Stock (Maggie Stock Cube) – 500 ml

Milk – 1/2 cup

Cheese (Cheddar) – 2 slices (Optional)

Butter – 1 teaspoon

Pepper – 1 teaspoon

Salt to taste

Method

1. Boil Broccoli with Stock Cube in about 600 ml water.

2. Strain the water and keep it for later use.

3. Heat butter in an pan and sauté the onions and garlic.

4. Add boiled broccoli and stir well.

5. Whisk the soaked almonds and crush it with 1/2 cup of milk in a blender to form almond paste. Add it to the sauté mix.

6. Blend Broccoli mix in a blender to make a puree.

7. Boil this puree and add cheese slices. Mix well to get a good soupy consistency and turn the flame to minimum.

8. Flavour it with salt and pepper.

9. Serve the Warm soup with a Bread of your choice.
Enjoy the hot comforting and delicious soup.

Saffron Pistachio Sandesh Panna Cotta / Guest Post By Bejaya Sinha 


Saffron pistachio sandesh panna cotta.

Its a guest post and 200th post on my blog. My recipe sharing journey started with food group ‘Chef At Large’. And I am very happy to share this recipe of a very talented member of this group.

 

Panna cotta is an Italian dessert made of sweetened cream thickened with gelatin or agar agar and moulded. Literally meaning of panna cotta is cooked or thickened cream. And this Saffron pistachio sandesh panna cotta is a fusion recipe. You can taste panna cotta in Bengali sandesh.

 

This is a guest post by Bejaya Sinha. We met each other in a food group Chef At Large.  She always amazed me with her delicious recipes and excellent photographs. She is an awesome home cook. Bejaya has shared many of her innovative recipes in food group.

“Kesar Pista Sandesh Panna cotta.

An innovative fusion of Sandesh &Panna cotta.

Absolutely creamy & delicious sweet made with agar agar.

Dedicated to my mother who was an excellent cook..

I have learnt cooking from her specially sandesh.. She used to pack homemade sandesh in our tiffin box and all my friends were crazy about that sandesh..

Now my kids also love sandesh.”

Its a single serving recipe you can make double or more.

 

Recipe 


Soft paneer or cottage cheese – 1 tablespoon

Milk powder 1 teaspoon

Sugar – teaspoon

Milk – 2 tablespoon

Cream – 1 tablespoon

Saffron – a pinch

Agar agar powder – a big pinch

Pistachio – 1/2 teaspoon + 1/4 teaspoon

Cardamom powder – a pinch

Method 


Its a single serving recipe. You can make it double or more.
Mash 1 tablespoon sotf paneer or cottage cheese, 1 teaspoon milk powder, 2 teaspoon sugar till smooth.

Boil 2 tablespoon milk &1 tablespoon cream and a pinch of Saffron together. Add a big pinch of agag agar powder.

Whisk till smooth.. Add paneer mix, cardamom powder and, 1/2 teaspoon chopped pistachio. Mix well.

In a greased mould add 1/4 teaspoon chopped pistachio. Pour panna cotta mix.

Chill for 2 hours in refrigerator.

Unmould and serve.

Add some cream mixed with kesar on top.

You can adjust sugar as per taste.

Black rice is quite popular in Asia. The black rice has a texture similar to brown rice, but with a more prominent nutty flavor. The dark color of the rice is due to the un-milled rice grain, which leaves a dark husk. It is this outer layer of bran that sets black rice apart from other types of unpolished rice. This dark husk contains a special phytonutrients, called anthocyanins which is responsible for the reds, blues, purples, and magenta colours found in blueberries, grapes etc.In ancient China, Black Rice was known as “Emperor’s Rice”, and it was reserved exclusively for Chinese Royalty. Since black rice was quite rare, and for this reason it is known as “forbidden rice” also.
