No maida no sugar no butter. Absolutely guilt free snack Even diabetic people can enjoy these cookies. Cookies are sweetened with little date powder. But remember to eat moderately, only one or two in a day.


Dates

Almond
Almonds will give a nutty flavour. And make your cookies more nutritious. Nuts are low in carbs but high in healthy fats, protein, and fiber. This makes them a perfect choice for people with diabetes. Almonds are high in antioxidants, vitamin E, protein, and fiber. Baking powder and soda used to make the cookies light and airy.
Salt used to balance the taste.
Lemon juice and lemon zest will give a mild lemony taste and flavour. If you want more lemony flavor add one tablespoon lemon juice and half teaspoon lemon zest.

Recipe
Oatmeal or oats powder – 1 cup
Desiccated coconut- 1/4 cup
Almond- 1/4 cup
Date powder- 1/4 cup
Baking powder- 1/2 teaspoon
Baking soda- 1/4 teaspoon
Coconut oil- 1/4 cup
Salt- a small pinch
Lemon juice- 2 teaspoon
Lemon zest- 1/4 teaspoon

Method
1. Preheat the oven at 170°. Grease a baking tray or line with parchment paper.
2. Grind the almonds. Scrap the sides of the grinder jar and add desiccated coconut. Grind again.

3. In a mixing bowl whisk date powder and coconut oil. Add lemon juice and lemon zest. Whisk everything well. For strong lemony flavor use 1 tablespoon Lemon juice . If you don’t have oatmeal just grind rolled oats into fine powder. Add salt, ground aand 1/2 teaspoon Lemon zest.

4. Add oatmeal almond and desiccated coconut, baking soda and baking powder. Mix everything well. Add little water to make a smooth dough. Don’t knead much.

5. Make small balls with one tablespoon dough. Press gently and arrange on a greased baking tray. Keep distance between each cookies. Press gently with a fork.

6. Bake in preheated oven at 170° for 10-12 minutes or until edges becomes brown.


7. Let the cookies cool down completely. Serve or store in airtight container for later use.

Notes
1. Any flour can be used instead of oatmeal.
2. You can use butter or ghee/clarified butter instead of coconut oil.
3. Milk can be used instead of water to make dough.
4. You can use vanilla or any other flavor instead of lemon.
