Dates

This is significant, as dietary fiber helps your body absorb carbs at a slower pace, which is especially important for people living with diabetes. The slower carbs are digested, the less likely your blood sugar will spike after eating. Dates boast an impressive nutrient profile but are quite sweet. Yet, they’re packed with fiber, which helps your body absorb its sugars more slowly. When eaten in moderation, they’re a safe and nutritious choice for people living with diabetes. Dates have a low GI, which means they’re less likely to spike your blood sugar levels, making them a wholesome choice for people with diabetes.  Source

Oats

Studies show that oats and oatmeal have many health benefits. These include weight loss, lower blood sugar levels, and a reduced risk of heart disease. Oats are among the healthiest grains on earth. They’re a gluten-free whole grain and a great source of important vitamins, minerals, fiber, and antioxidants.  Source

Coconut oil

These cookies are absolutely gluten free and vegan. Used coconut oil instead of butter.

Almond

Almonds will give a nutty flavour. And make your cookies more nutritious. Nuts are low in carbs but high in healthy fats, protein, and fiber. This makes them a perfect choice for people with diabetes. Almonds are high in antioxidants, vitamin E, protein, and fiber. Almonds may have health benefits, including supporting heart health and reducing blood pressure, among others.  Source

Desiccated coconut will give a wonderful taste.

Baking powder and soda used to make the cookies light and airy.

Salt used to balance the taste.

Lemon juice and lemon zest will give a mild lemony taste and flavour. If you want more lemony flavor add one tablespoon lemon juice and half teaspoon lemon zest.

Recipe Developer Behind The Blog

Hello there!

I am Sujata Roy. A homemaker, a blogger, a passionate cook, a recipe developer, a home baker, and lastly a foodie.

Experimenting in the kitchen is what I love and enjoy doing the most. Specially experimenting with vegetarian dishes and egg-less cakes and cookies is what interests me more.

My loved ones are fond of vegetarian cuisines, so I have them in my mind whenever I dish out a new recipe.

However, I do not limit my experimental cooking to vegetarian recipes only, non-vegetarian recipe ideas are also dished out. And you can also get many healthy recipes in this blog, including different types of baking ideas with healthy ingredients. So enjoy healthy foods without compromising on taste.

Thank you for visiting my blog. Happy Cooking!
