Preheat the oven at 170°. Grease a baking tray or line with parchment paper.
Grind the almonds. Scrap the sides of the grinder jar and add desiccated coconut. Grind again.
In a mixing bowl whisk date powder and coconut oil. Add lemon juice and lemon zest. Whisk everything well. For strong lemony flavor use 1 tablespoon Lemon juice . If you don’t have oatmeal just grind rolled oats into fine powder. Add salt, ground aand 1/2 teaspoon Lemon zest.
Add oatmeal almond and desiccated coconut, baking soda and baking powder. Mix everything well. Add little water to make a smooth dough. Don’t knead much.
Make small balls with one tablespoon dough. Press gently and arrange on a greased baking tray. Keep distance between each cookies. Press gently with a fork.
Bake in preheated oven at 170° for 10-12 minutes or until edges becomes brown.
Let the cookies cool down completely. Serve or store in airtight container for later use.
