Wishing everyone a very Happy New Year. May this year bring endless happiness with your loved ones. Have a prosperous and joyful year ahead.
Eggless marble loaf cake. A super soft, moist and delicious eggless cake without butter or maida or refined flour. This whole wheat flour or atta and oats cake is a perfect treat for your kiddos.
I have used whole wheat flour and oatmeal in this cake but you can use any flour of your choice. Use any gluten free flour instead of whole wheat flour if you want.
If you don’t have oatmeal, grind 1/2 cup rolled oats and your oatmeal or oats powder is ready to use.
You can use any flavorless oil like olive oil, groundnut oil, rice bran oil etc. I used cold pressed groundnut oil.
Vegan people can replace milk with coconut milk, almond milk, soy milk or any plant based milk.
Recipe is very easy and simple. Just mix everything and bake. Microwave convection users preheat and bake at 170° and OTG users set the temperature at 180°. Every oven takes different time so keep an eye after 25 minutes. In microwave convection your cake will be ready in 25 to 32 minutes but in OTG it will take 35 to 40 minutes. You can also make it on stove top. Heat a kadhai or wok with some salt and a ring or stand. Place the cake pan on stand when heated. Cover and bake on low medium flame for 30-40 minutes or until toothpick comes out clean.
You can also use any other flavors instead of vanilla and chocolate. Use any two different fruity flavor according to your choice. You can get one more recipe of eggless lemon chocolate marble cake here.

Recipe
Whole wheat flour or atta – 1 cup
Oatmeal – 1/2 cup
Milk – 1 cup
Vinegar – 1 tablespoon
Sugar – 3/4 cup
Baking powder- 1 tsp
Baking soda- 1/2 tsp
Vanilla essence- 1 tsp
Oil- 1/2 cup
Milk powder- 1/4 cup
Cocoa powder- 2 tablespoon
Method
1. Preheat the microwave convection at 170°. For OTG preheat at 180°.
2. Grease a loaf pan or round baking pan or line with parchment paper.
3. Mix vinegar with room temperature or lukewarm milk and keep aside.
4. In a bowl mix oats powder, whole wheat flour, baking powder, baking soda and milk powder. You can sieve the dry ingredients if you want. If you don’t have oatmeal or oats powder just grind 1/2 cup rolled oats in your mixer grinder. If you don’t want cracks on your cake use half teaspoon baking powder instead of one teaspoon.
5. In a large bowl mix vinegar mixed milk, oil and vanilla essence. Mix everything well until sugar dissolves completely. I had only 1/4 cup Powdered sugar so used granulated sugar instead. If you have powdered sugar use it or grind granulated sugar for quick mixing.
6. Add dry ingredients gradually. Mix we to make a smooth lump free batter.
7. Divide the batter in two different bowls. Mix cocoa powder in one bowl and mix well.
8. Take two different large spoon for both batter. Pour 1 spoonful vanilla batter in the middle of the pan and pour a spoonful chocolate batter over it. Pour both cake batter alternately. Repeat till all the batter used up.
9. Tap the cake pan gently on your kitchen counter to remove the air bubbles.
10. With a knife or skewer swirl the mixture in the pan couple of times to give the cake a marble effect. You can skip this step if you want.
11. Bake in preheated microwave convection oven at 170° and in OTG bake at 180° for 30 minutes. Or till toothpick comes out clean . Every oven takes different time. If you are using microwave convection check after 25 minutes. Mine takes 32 minutes in microwave convection or hot blast mode. Insert a toothpick in the middle of the cake to check. If toothpick comes out clean then your cake is ready.
12. Let the cake cool down completely before slicing. Slice and enjoy the taste and flavour of chocolate and vanilla in on cake. Happy baking 😊
