Tomato jelly. Homemade jelly is always best. Its only three ingredients recipe and very easy to make. You don’t need gelatin or agar agar to make this tomato jelly. Make your kids happy with this easy quick and delicious homemade jelly without any artificial colour or flavour. You can also make guava or any fruit jelly following this recipe.

My mother used to make delicious jelly with different seasonal fruits. And we love those homemade jelly with crisp toast. I am sharing that age old recipe here. Very simple and easy process but taste is lipsmackingly delicious. You don’t need gelatin or agar agar or artificial colour or flavour to make this tomato jelly.

Ingredients I used to make this jelly with tomato

Sugar – I have used granulated white sugar. Sugar used not only as sweetener but it also acts as preserving agent.

Ginger julienne – Ginger julienne is optional. But I like the mixed taste of sweet tomato and ginger. And thin ginger julienne looks great in jelly. I have used 1 tablespoon ginger julienne but you can use 2 tablespoon full. If you will add more, you can see long thin ginger pieces from outside of the glass jar. It will look beautiful. Or you can skip ginger julienne if you want.

Lemon juice – Used lemon juice for a lovely flavour and lemon also works like an acid to promote gel formation. So don’t skip lemon juice.

You can double the recipe. Just measure the juice of boiled tomatoes and add same amount of sugar. You can also pressure cook the tomatoes. Fill the glass jar with warm jelly because jelly will be thick when cool. Your jelly will perfectly set in 10 minutes after pouring in glass jar. Use clean and dried glass jar to store the jelly. Use more ginger julienne if you like the taste. And ginger julienne looks beautiful in bright red jelly.

Recipe

Tomato – 500 gram or 6 medium

Sugar – 1 cup

Ginger julienne – 1 tablespoon

Lemon juice – 1 tablespoon

Water – 2 cup

Method

1. Rinse and cut off the tips of tomatoes. Let it boil for 20 minutes with 2 cup water.

2. Flip the tomatoes once after 10 minutes. Cook covered. Let it cool down.

3. Place a strainer on a bowl. Strain the boiled tomatoes. Press gently with a spoon. We need the juice only.

4. Measure the extracted juice. Use same amount of sugar. Watch video recipe for details. Strain the remaining water of boiled tomatoes too.

5. Heat a pan and add strained water of boiled tomatoes, sugar and ginger julienne. Let it boil.

6. Add strained juice of tomatoes. Mix and cook on medium heat. Stir continuously. Cook till mixture becomes thick.

7. Add lemon juice and remove from heat. It will take 15-20 minutes. Pour the jelly in a cleaned and dry glass jar when warm. Jelly will becomes thick and perfect jelly like consistency when cool. And you can easily spread it on the toasted bread.

Notes

1. You can make jelly with any ripe fruit following this method.

2. You can pressure cook the tomatoes or fruits you are using to make jelly.

3. Ginger julienne is optional. You can skip or use more if you want. I recommend to use little ginger. It will enhance the taste and flavour.
