Kathal or jackfruit maharani. A lipsmackingly delicious mughlai curry with Kathal. You can also use paneer instead of kathal to make delectable paneer maharani. This recipe is inspired by mughlai chicken maharani. Chicken maharani is a shahi chicken curry. You don’t need tomatoes to make this curry. Today I am sharing this maharani recipe with Kathal or jackfruit for vegetarian people. I am sure you will love the taste.

You need very simple ingredients to make this delicious curry. But taste is scrumptious. You will get really shahi or royal taste and flavour. Little Kewra water made this curry absolutely aromatic. You can serve this curry with roti, paratha, puri, naan, steamed rice, pulao, fried rice etc.

Jackfruit can be cooked in different ways. You can fry the jackfruit pieces before adding in the curry or lightly boil or saute with spices. It will be delicious in all the methods. You can also make jackfruit tikka with marinated jackfruit.

To make this shahi kathal maharani you need only a few spices. With onion, garlic, chili, curd and nuts we have to make some dry roasted spices. These roasted and ground spices will give a wonderful flavour. You can make this gravy with any vegetables or paneer instead of kathal or jackfruit. Use paneer and make delicious paneer maharani. Recipe

Jackfruit pieces- 3 cup

Curd or yogurt- 4 tablespoon

Kasuri methi- 1&1/2 teaspoon

Kashmiri Red Chilli powder- 1&1/2 teaspoon

Ginger garlic paste- 1 tablespoon

Onion – 1, large

Green chilli- 2 or to taste

Coriander seeds – 1 teaspoon

Cumin seeds- 1 teaspoon

Fennel seeds or sounf- 1 teaspoon

Cashew nuts- 8

Almond- 9-10

Chilli flakes- 1/2 teaspoon

Milk – 1&1/2 cup

Kewra water- 1/2 teaspoon, optional

Oil – 3 tablespoon

Method

1. Boil the jackfruit pieces with sufficient water till fork tender. Jackfruit shouldn’t be mushy. Drain the water and let the jackfruit pieces cool down.

2. Marinate with ginger garlic paste, curd or yogurt, 1 teaspoon Kasuri methi and Kashmiri red chilli powder. Marinate for 30 minutes.

3. Dry roast coriander seeds, cumin seeds and fennel seeds. Don’t make brown, dry roast till spices becomes fragrant. Transfer the seeds on a plate. Let it cool down. Grind the seeds and keep aside.

4. Grind cashew nuts and almond. Add 1/4 cup milk and grind again to make a smooth paste.

5. Grind onion and green chilli into a smooth paste.

6. Heat oil in a wok or pan. Add onion green chilli paste. Saute till oil leaves the sides.

7. Add marinated jackfruit pieces and salt. Saute till dried up. Add almond and cashew paste and saute for a minute.

8. Add red chilli flakes and half of the dry roasted spices. Mix everything well. Add milk and mix well. You can add little more milk if you want more gravy.

9. When it starts to boil reduce the heat and cover the pan. Cook on simmer for 5-6 minutes.

10. Now add remaining dry roasted spices. Crush 1/2 teaspoon Kasuri methi with your palm and mix. Switch off the heat.

11. Let the curry covered for 4-5 minutes. Serve hot with roti paratha, puri, naan, steamed rice, pulao or jeera rice.

Notes

Ingredients
  

  • 3 Cup Jackfruit
  • 4 Tbsp Curd
  • 1&1/2 Tsp Kasuri methi
  • 1&1/2 Tsp Kashmiri red chilli powder
  • 1 Tbsp Ginger garlic paste
  • 1 Onion Large
  • 2 Green chilli Or to taste
  • 1 Tsp Coriander seeds Cumin
  • 1 Tsp Cumin
  • 1 Tsp Fennel seeds or
  • 8 Cashew
  • 9-10 Almond
  • 1/2 Tsp Chilli flakes
  • 1&1/2 Cup Milk
  • 1/2 Tsp Kewra water Optional
  • 3 Tbsp Oil
