METHOD

1. Grind the carrots. You can use little water to make smooth paste.
Grind tomato, ginger and garlic. Keep aside.

2. Heat ghee or clarified butter in a pressure cooker. Add cumin seeds, bay leaf, crushed cardamom, cinnamon and cloves. Let the cumin seeds crackle. Then add rice. Stir gently.

3. Add salt and sugar. Mix well and add water. Close the lid. Switch off the flame after 1 whistle. Let the pressure cooker cool down.
Fluff the rice gently. Discard the bay leaf.

4. Heat 2 tablespoon oil in a nonstick pan. Add chopped onion. Fry till its starts to change colour. Add ginger, garlic and tomato paste. Saute till the raw smell goes away. Add the carrot paste.

5. Saute and add salt, cumin powder, garam masala powder and kashmiri red chilli powder. If you are making for kids skip the red chilli powder.

6. Add chopped coriander leaves or mint leaves.
Saute till the mixture dried up completely.
Now add the rice. Mix gently.

7. Carrot rice or pulao is ready. Garnish with fried cashew nuts and coriander leaves or mint leaves.
Serve hot with any raita, chutney or salad.

Notes

1. You can use sweet corn, green peas or any vegetable of your choice in the rice.

2. If you want your rice more spicy add 1-2 green chilli with tomato, ginger and garlic. Or use chopped green chilli and fry with onion.

Recipe Developer Behind The Blog

Hello there!

I am Sujata Roy. A homemaker, a blogger, a passionate cook, a recipe developer, a home baker, and lastly a foodie.

Experimenting in the kitchen is what I love and enjoy doing the most. Specially experimenting with vegetarian dishes and egg-less cakes and cookies is what interests me more.

My loved ones are fond of vegetarian cuisines, so I have them in my mind whenever I dish out a new recipe.

However, I do not limit my experimental cooking to vegetarian recipes only, non-vegetarian recipe ideas are also dished out. And you can also get many healthy recipes in this blog, including different types of baking ideas with healthy ingredients. So enjoy healthy foods without compromising on taste.

Thank you for visiting my blog. Happy Cooking!
