Kathal or jackfruit maharani. A lipsmackingly delicious mughlai curry with Kathal.This recipe is inspired by mughlai chicken maharani. Chicken maharani is a shahi chicken curry.

Ingredients
  

  • 3 Cup Jackfruit
  • 4 Tbsp Curd
  • 1&1/2 Tsp Kasuri methi
  • 1&1/2 Tsp Kashmiri red chilli powder
  • 1 Tbsp Ginger garlic paste
  • 1 Onion Large
  • 2 Green chilli Or to taste
  • 1 Tsp Coriander seeds Cumin
  • 1 Tsp Cumin
  • 1 Tsp Fennel seeds or
  • 8 Cashew
  • 9-10 Almond
  • 1/2 Tsp Chilli flakes
  • 1&1/2 Cup Milk
  • 1/2 Tsp Kewra water Optional
  • 3 Tbsp Oil

Instructions
 

  • Boil the jackfruit pieces with sufficient water till fork tender. Jackfruit shouldn’t be mushy. Drain the water and let the jackfruit pieces cool down.
  • Marinate with ginger garlic paste, curd or yogurt, 1 teaspoon Kasuri methi and Kashmiri red chilli powder. Marinate for 30 minutes.
  • Dry roast coriander seeds, cumin seeds and fennel seeds. Don’t make brown, dry roast till spices becomes fragrant. Transfer the seeds on a plate. Let it cool down. Grind the seeds and keep aside.
  • Grind cashew nuts and almond. Add 1/4 cup milk and grind again to make a smooth paste.
  • Grind onion and green chilli into a smooth paste.
  • Heat oil in a wok or pan. Add onion green chilli paste. Saute till oil leaves the sides.
  • Add marinated jackfruit pieces and salt. Saute till dried up. Add almond and cashew paste and saute for a minute.
  • Add red chilli flakes and half of the dry roasted spices. Mix everything well. Add milk and mix well. You can add little more milk if you want more gravy.
  • When it starts to boil reduce the heat and cover the pan. Cook on simmer for 5-6 minutes.
  • Now add remaining dry roasted spices. Crush 1/2 teaspoon Kasuri methi with your palm and mix. Switch off the heat.
  • Let the curry covered for 4-5 minutes. Serve hot with roti paratha, puri, naan, steamed rice, pulao or jeera rice.

Notes

1. You can fry the jackfruit pieces instead of boiling.
2. Use paneer cubes instead of jackfruit and make delicious paneer maharani. Enjoy the wonderful taste and flavour.
3. Use chilli less or more according to your taste.
4. You can use any other vegetable of your choice instead of jackfruit.
