Equipment

  • 1 Pan
  • 1 Spatula
  • 1 Saucepan
  • 1 Strainer

Ingredients

  • 200 gram Shell pasta Boiled and drained
  • 1 Onion chopped
  • 3 Cloves Garlic minced
  • 6 Cherry tomatoes halved
  • 12 Cherry tomatoes Whole
  • 1/3 cup Sweet corn
  • 2 tbsp Olive oil
  • 1 Cheese cube grated
  • Salt
  • 1 tsp Dried basil
  • 1/2 tsp Black pepper freshly crushed
  • 1/4 cup Water

Instructions

  • Boil the pasta as directed on the package. Rinse with fresh water. Drain the water and keep aside. Reserve 1/4 cup water.
  • Heat oil in a pan. Add garlic and finely chopped onion. Saute till onion becomes translucent.
  • Add halved and whole Cherry tomatoes. Saute till tomatoes soften and start to release the juice.
  • Add sweet corn. I have used frozen sweet corn. If you are using fresh sweet corn, boil the corn kernel before using. Add salt and cook for 2-3 minutes. Keep stirring.
  • Add boiled pasta and mix well. Add dried basil and freshly crushed black pepper. Toss everything well.
  • Add grated cheese and mix well. Add 1/4 cup water or remaining water of boiled pasta. Mix and cook for 1-2 minutes.
  • Taste and adjust the seasoning. Add little more black pepper, salt and basil if required. Remove from heat. Your pasta is ready to serve. Garnish with Cherry tomato and grated cheese. Serve hot.
