Lotus Stem Biryani Or Pulao 

Lotus stem or kamal kakdi biryani or pulao. A very flavourful and delicious rice dish with lotus stem and some aromatic spices.
Lotus stem is packed with important minerals just like zinc, manganese, magnesium, iron and copper.

Lotus stem is a great source of Vitamin C, which helps boost the immunity of a person and fight viral infections.The root also contains essential minerals like zinc, magnesium, copper and iron, which help the body in the production of red blood cells. Source – Times Of India

I have used a very aromatic spice kababchini/cubeb or tailed pepper in it. It is considered to be a very useful and medicinal herb. And it has countless health benefits too.




Rice  – 1 cup washed and soaked for half an hour


Lotus stem  – 1 cup sliced

Potatoes  – 2 large cubed

Onion  – 2 chopped

Garlic paste  – 2 teaspoon

Ginger paste  – 1 teaspoon

Bay leaves  – 2

Cardamom  – 3+2

Cinnamon  – 2 small piece

Mace or javitri  – 2 string

Star anise  – 1/4 piece

Kababchini/cubeb  – 2-3

Clove  – 4

Salt to taste

Cumin powder  – 1 teaspoon

Black pepper powder  – 1 teaspoon

Red chilli powder  – 1/2 teaspoon optional

Green chilli  – 2 chopped

Biryani masala  – 1 and 1/2 teaspoon

oil  – 2 tablespoon

Ghee or clarified butter – 1 tablespoon

Curd  – 2 tablespoon

Tomatoes  – 2 large

Fried onion slices  – 1 cup



Boil the rice with 1 and 1/4 cup water, 2 cloves, 2 crushed cardamom, 1 stick cinnamon and 1 bay leaf for 12 minutes in microwave on high power. Fluff the rice gently and keep it in microwave.


Grind the tomatoes with rest of cardamom, cinnamon, cloves, star anise, mace and kababchini. Make a smooth paste and keep aside. Beat the curd with all the dry spices.

Heat oil in a pan. Add chopped onion and green chilli. Saute till the onion starts to change it’s colour. Now add ginger garlic paste. Fry till the raw smell goes away. Add the tomato paste and saute till it dried up.

Add well beaten curd and stir continuously. Add potatoes and lotus stem in it. You can fry the potatoes and lotus stem separately before adding.

Add salt and fry well. Add enough water to cook. Don’t add too much water we need it almost dry. The gravy should be thick. Cover and cook until  potatoes and lotus stem becomes soft.

Now in a microwavable container spread a layer of vegetables then spread a layer of rice. Spread fried onions. Spread all the rice and vegetables in this way. Cover with generous amount of fried onions. You can use fried cashew nuts too. Sprinkle ghee or clarified butter over it. Cover and microwave on low power for 8-10 minutes.
Uncover and microwave again for 5 minutes on high power.


Take out the bowl after 3-4 minutes. Fluff the rice gently. Mix well. Spread some more fried onions and cashews.
Serve hot with raita or any curry..

Enjoy the aromatic and delicious rice.

Egg Less Sugarless Dry Fruits Cupcake With oats



Sugarless, butter less and egg less dry fruit cupcakes with oats.
A very healthy and yummy cupcake. You will love the aroma of cinnamon, cardamom and nutmeg.

A very flavourful dry fruit cake with all the goodness of dry  fruits and oats.

I haven’t used all purpose flour/maida ,sugar or any artificial sweeteners in it.
Perfect to satisfy the sweet craving of all the health conscious people.

Dry fruits are an easy source of essential nutrients. It is zero cholesterol and fats so totally guilt free. It has natural sugar,fiber and all the nutrients we need to maintain a healthy lifestyle.

Our this week’s #Foodiemonday #bloghop theme is dry fruits. My contribution is this super healthy and yummy cupcake.


This post is dedicated to all the diabetic people. They can enjoy it too. Just omit the tutti-frutti  and candied cherry. Because they have little sugar. And its perfect for you. I have used rice bran oil but you can use olive oil or any white oil.



Oats  – 1 cup ground

Whole wheat flour or atta  – 1/2 cup

Milk powder  – 1/2 cup

Oil  – 1/2 cup

Milk  – 1 cup+1/4 cup

Vinegar  – 1 tablespoon

Baking powder  – 1/2 teaspoon

Baking soda  – 1/2 teaspoon

Dates  – 1 cup seedless and chopped

Raisins  – 1/2 cup cleaned and soaked

Cashew nuts  – 1/4 cup

Almonds  – 1/4 cup soaked and peeled

Tutti-frutti  – 1/2 cup optional

Cinnamon powder  – 1/2 teaspoon

Cardamom powder  – 1/4 teaspoon

Nutmeg  – 1/4 teaspoon powder or grated

Candied cherry  – few for garnish, optional



Preheat the oven at 180° for 10 minutes.
Grease the cupcake moulds or muffins pan.
Add the vinegar in milk and keep aside.

Grind chopped dates, soaked raisins, soaked and peeled almonds and cashew nuts with 1/4 cup milk. Don’t make it smooth. Make a coarse paste.

Mix ground oats, whole wheat flour, milk powder, baking powder, soda, cardamom powder, cinnamon powder and nutmeg.

In a large bowl mix oil and milk vinegar mixture.
Add half of the dry ingredients mix well and add remaining dry ingredients and coarse dry fruit and dates paste.

Add tutti-frutti. Mix well. You can add little more milk if require. Make a thick batter.

Pour the batter in oil or butter greased moulds or muffins pan. Fill 3/4 in each mould.
Decorate with half candied cherry and tutti frutti.

Bake in preheated oven at 180° for 25 – 30 minutes. Or until the toothpick comes out clean.

Every oven take different time. Check after 15 – 18 minutes. Insert a toothpick in the middle of a cupcake. If it comes out clean its ready.

You don’t need any icing on it.
Let it cool and serve.

Note –
If you want to serve diabetic patient omit the tutti frutti and candied cherry.
If don’t have moulds make it in a cake tin, slice and enjoy 🙂

Sprouts And Oats Pan Fried Cutlet


Green gram/moong sprouts and oats pan fried cutlets.
I have already shared a sprouts appe here.
Now sharing an easy to make pan fried cutlets.

Its fried with very little oil. So a perfect snack for health conscious people.
Green Moong lentils are loaded with nutritional health benefits. By eating Green moong lentils or dal you get high protein, low calorie food that is packed with vitamins and minerals.

A best filling option for those who wants to shed kilos.
And Sprouts are wonder food due to its high nutritional value.
And we all know oats as world’s healthiest food. Better way to gain the strength and energy. Oats are loaded with dietary fiber too.
So enjoy it as a snack without any guilt.



Green gram/green moong – 1 cup overnight soaked or sprouts

Oats  – 1 cup ground

Grated ginger  – 1 teaspoon

Garlic paste  – 1 teaspoon

Cumin powder  – 1 teaspoon

Onions  – 2 finely chopped

Lemon juice  – 1 teaspoon

Salt  – 1 teaspoon or to taste

Green chilli  – 1-2  finely chopped

Potatoes  – 2 boiled and mashed

Coriander leaves  – 2 tablespoons chopped

Black pepper powder  – 1/2 teaspoon optional

Oil for shallow frying



Grind the oats and keep aside. We have to use it for binding.
Grind the soaked green gram or sprouts.

In a large bowl mix green gram/sprouts paste, boiled and mashed potatoes, onions, salt and all the spices. You can add some more boiled potatoes or some grated paneer/cottage cheese for taste. Mix well.

Now add ground oats gradually. Add as much require for binding.
Make patties of any shape of your choice.
Shallow fry on a nonstick pan with little oil.

Serve hot with onion rings and sauce or any chutney.
You can pair it with burger buns with onion, tomato rings and sauce. Or make sandwiches with it.

You can sprinkle some chaat
masala over the cutlets.
Enjoy the healthy and delicious pan fried cutlets.


Cheesy Bread



Cheesy bread
Baking is stress buster for me. I love the aroma of baking.
I have always used store bought bread. But now aroma of freshly baked bread filled my house and taste is amazing. Loved it and in future a big no to store bought bread.


Its super easy to make.
You have so many options to change the taste of your bread everytime.

Our this week’s #foodiemonday #bloghop theme is bread.


So I am sharing this cheesy bread. Its very easy to make. I have used whole wheat flour in it. And stuffed with pizza sauce, oregano and cheese.

You can use fried onion garlic with capsicum, mushroom etc for stuffing. Add any vegetables of your choice.



Whole wheat flour or atta – 2 cup

All purpose flour or maida – 1 cup

Yeast  – 1 and 1/2 teaspoon

Salt – 1 teaspoon

Sugar – 1 tablespoon

Oil – 2 tablespoon

Vinegar – 1 and 1/2 tablespoon

Milk – 1/4 cup

Water – 1 cup

Little milk for brushing

Pizza sauce – as require

Oregano  – to sprinkle

Cheese – as much as you like



Mix sugar and yeast in 1/4 cup warm milk. Milk should be warm not hot. Stir well cover and keep aside for 15 minutes.

In a large bowl take flours, oil, salt and vinegar. Mix well . Add yeast mixture and water. Make a smooth dough. Knead the dough for 8 to 10 minutes.

Smear with oil and cover with a kitchen napkin. Keep the bowl in a warm place for 2 hours. I have kept the dough in my oven.

After 2 hours punch down the dough. It will be double. Knead again and put in a greased loaf pan if you want to make bread without any stuffing.
I have made one stuffed loaf and one braided bread.

Or make a layer of half of the dough. Spread pizza sauce over it. Sprinkle grated mozzarella cheese and oregano. Now cover it with one more layer of dough. You can use any stuffing of your choice.

Or make a round ball. Roll it with a rolling pin. Roll in a rectangle flat bread. Cut it length wise in 3 equal pieces.

Spread pizza sauce, mozzarella cheese and oregano over them. Fold and make them half.
Join them at one end press with your fingers.

Join all the strips by overlapping each other. Close the other end tightly.

Cover both of them with a kitchen napkin and leave for one hour more for final proofing.

Preheat the oven at 200° for 20 minutes. Brush the breads with milk. Bake for 30 minutes or until the colour becomes golden brown.

Slice them and serve with butter. Enjoy the hot stuffed bread with tea or coffee.

Virgin Mojito/Mocktail With Watermelon And Fanta


Virgin mojito or mocktail with watermelon and Fanta.
Mojito is a traditional Cuban highball.

Traditionally mojito is a cocktail or alcohol based drink consist of mint leaves, lime juice, sugar sparkling water and white rum.

But virgin mojito has lime juice, mint leaves and sugar syrup.
And mocktail is a non alchoholic drink which consists of a mixture of fruit juices, syrups or soft drinks.

Call it virgin mojito or mocktal but taste is awesome.
Weather is too hot. And its a perfect drink to beat the heat.

I haven’t used sugar in it. I have a Fanta bottle so used it but you can use any  orange flavored carbonated drink.

You can use sparkling water or soda water too but then you have to use sugar in it. You can make it with litchi too if you don’t like watermelon.



Watermelon cubes  – 2 cup seedless

Lemon juice  – 2 teaspoon

Mint leaves  – 1/4 cup loosely packed

Fanta  – 1/2 cup

Ice cubes  – as require



Combine watermelon cubes, mint leaves and lemon juice. If you don’t like mint much add only few leaves. Blend till smooth.

Strain the mixture and add Fanta. You can use any orange flavored carbonated drink too.

If you are using sparkling water or soda water add sugar to taste before blending.

Keep the mixture in refrigerator for an hour to chilled.
Now place some ice cubes and few fresh mint leaves in a glass. Pour the mixture over it.

Garnish with mint spring,  lemon and watermelon wedges.
Serve chilled.
Enjoy the heavenly taste.

Mango Sandesh


Aam Sondesh or mango sandesh
I have already posted some sandesh recipes. Sandesh or Sondesh is a famous sweet of Bengal, made of Paneer/chhena or cottage cheese. Its can be made with different flavours.
This time I have made it everyone’s favourite fruit mango.

“The king of the fruits,” mango fruit is one of the most popular, nutritionally rich fruits with unique flavor, fragrance, taste, and heath promoting qualities, making it number one among new functional foods, often labeled as “super fruits.”

Very easy to make. Only few ingredients with mango makes a delicious sweet.
You need only cottage cheese, reduced milk, mango pulp, sugar and little cardamom powder.



Paneer/chhena or cottage cheese  – 1 cup crumbled

Reduced milk or khoya  – 1/2 cup
Sugar  – 1/3 cup

Mango – 1, pureed

Cardamom powder  – 1/4 teaspoon optional



Combine cottage cheese or paneer, reduced milk, sugar and mango pulp.

I have used homemade khoya or reduced milk. To make reduced milk or khoya cook the milk on low flame. Stir continuously and scrape the sides. Cook till the milk becomes thick and almost dry.

Now grind the Cottage cheese, reduced milk, mango pulp and sugar mixture.
Make a smooth paste.

Heat a heavy bottom pan. Pour the mixture in it. Cook on low medium heat. Stir continuously.

Cook until the mixture becomes a dough like consistency. And leaves the sides. Switch off the flame. Add cardamom powder and mix well.

When it still little warm knead with your finger tips. Knead nicely to make it more smooth.

Now make small balls and give them shape in moulds.
If you don’t have sandesh mould make round balls with your palm then flatten it. Make them round or square. Make the shape of your choice.

Serve fresh or store in refrigerator for later use. You can store in refrigerator for 3-4 days.

Litchi Watermelon Dates Peach Tulsi And Almond Smoothie


Watermelon, litchi, peach, dates, Tulsi/holy basil and almond smoothie.
I always like to take a glass of smoothie in my fasting days. On these days salt and grains are not allowed.

Refreshing, filling and delicious smoothie is a best way to hydrate us in this scorching summer. And its a without sugar and dairy free smoothie so perfect for everyone even diabetic people too.


I have added little cucumber too which provides antioxidants and anti-inflammatory benefits.

A smoothie with litchi. This juicy summer treat is not only yummy. It is highly rich in nutrients and offers numerous benefits for your skin, hair, and health that make it more irresistible.

Peaches also offer a rich treasure of minerals such as calcium, potassium, magnesium, iron, manganese, phosphorous, zinc, and copper.

Peaches are low in calories, contain no saturated fat or cholesterol, and are a good source of dietary fiber.

Refreshing Watermelon soaked with nutrients. Contents vitamin A. B6, C, antioxidant and amino acids.
Its detoxifying, support immune system, lower cholesterol and blood sugar.

And we all know that Tulsi or Holy Basil, which has the scientific name Ocimum Sanctum is undoubtedly one of the best medicinal herb that has been discovered.

So make this super healthy and yummy smoothie to beat the heat.



Watermelon juice  – 1 cup

Litchi – 5

Peach  – 2

Dates  – 5

Tutsi or holy basil – 5-6 leaves

Almonds  – 5 soaked and peeled

Cucumber  – 1/2 peeled and grated

Cinnamon powder  – a small pinch

Juice of 1 lemon

Ice cubes as require



Peel the litchis. Remove the seeds of litchis, dates and peach and chop them.

Now combine everything in a blender. Blend till smooth and frothy.

Place some ice cube in a glass and pour the smoothie over it.
Enjoy chilled, healthy and delicious smoothie with the goodness of fruits.


Sugarless Dates And Oats Cookies



Sugarless, eggless dates and oats cookies.

May this Ramadan bring joy, health and wealth to you. May this festival brighten up you and your near and dear one’s lives.

Ramadan is the ninth month of the Islamic calendar. In this month Quran was revealed. The month is spent by Muslims fasting during the daylight hours from dawn to sunset.
It is a period of prayer, fasting, charity-giving and self-accountability for Muslims.

Eat healthy stay healthy.

I am sharing dates and oats cookies for this bloghop event. I have made this cookies without sugar or any artificial sweetener.
Healthy,  yummy and soft cookies.

Dates are rich in dietary fiber, antioxidants and the essential minerals potassium and magnesium.

A diet that regularly includes low-fat, nutrient-dense foods like dates may enhance your health and help decrease your chance of developing many chronic diseases.

And oats contains soluble fiber which stays in the stomach longer and helps you feel fuller. This can prevent overeating later on in the day, which may help you maintain a healthy weight and avoid the health  problems associated with overweight.

I have added whole wheat flour too because eating whole grains instead of refined grains lower the risk of many chronic diseases.



Oats  – 1/2 cup ground

Whole wheat flour  – 1/2 cup

Dates  – 1 cup deseeded and chopped

Ghee/clarified butter  – 1/4 cup

Cocoa powder  – 1 teaspoon

Baking powder  – 1/4 teaspoon

Water  – 1 cup



Grind the oats and keep aside.
Boil 1 cup water with chopped dates. When it starts to boil reduce the flame. Cook on low flame until the dates are becomes soft and mushy.
Let it cool.

Now grind the dates. Make a smooth paste.
In a bowl mix whole wheat flour, ground oats,  cocoa powder, baking powder and dates paste. If you want your cookies more crispy add 1/2 teaspoon baking powder.

Mix with your fingers properly.
Add ghee/clarified butter and make a smooth and semi stiff dough. I have used homemade ghee you can use butter too.

Preheat the oven at 180º.
Grease a baking tray or line with aluminum foil.

Make 16-18 small balls. I have made small bite sized cookies. But you can make large sized too.

Lightly flatten with your palm. Place them on the baking tray. Press every cookies with a fork.

Bake for 20-25 minutes or until the edges becomes brown.
After 20 minutes I have turned the cookies upside down and baked for 5 minutes more to bring some colour on upside too. But if you like skip this step. If the edges becomes brown its ready.

Let the cookies cool down and store in a airtight jar.
Enjoy the healthy and delicious cookies with your tea coffee or a glass of milk.
